In the past, I never really enjoyed cooking. I always thought it was a pain. But then I was diagnosed with a wheat allergy, and suddenly had to cook at home far more than I ever had before. Eating gluten-free has given me a new found energy, and now I enjoy cooking a lot more. Before, I was just too tired to do it! I love Allrecipes because it has shown me that so many dishes are naturally gluten and wheat free. And others are easily converted with 1 or 2 ingredient changes. Both my husband and I like that we're still eating "normal" food.

Baked Coconut Shrimp
I can't begin to tell you how pleased I was to discover this recipe. I was on the hunt for a gluten-free coconut shrimp. I found this and Alton Brown's. The two are very similar, except Alton's has less cayenne and adds white pepper, and is supposed to be fried. I used Alton's spices, but baked according to this recipe's directions. It was so easy, and delicious. My husband said it was some of the best coconut shrimp he's ever had. I made the orange marmalade sauce to go with it, and it tasted great. (1/2 cup orange marmalade, 2tsp. coarse ground mustard, and 1tsp. horseradish) I served it with Avocado Mandarin Salad on this site, which complemented the shrimp nicely.

Spicy Coconut and Lime Grilled Shrimp
I wasn't so sure about this recipe after putting the marinade together, as it didn't look very appetizing,but the flavors really blended together and made a good shrimp. It was spicy, but not too spicy. The coconut flavor wasn't very strong though. I may try adding coconut milk like other reviewers did next time.

Mojo Grilling Marinade
I hate to be the first naysayer, but I really didn't like this. IMHO Goya's Mojo Criollo marinade tastes much better, without all the trouble. I followed the recipe exactly. While I like how the freshness of the fruit juices came through, the balance of spices is off. I'm not sure which ones, maybe the cilantro? I gave 2 stars for the freshness factor, and because my husband said he liked it, but I won't make it again.
