In the past, I never really enjoyed cooking. I always thought it was a pain. But then I was diagnosed with a wheat allergy, and suddenly had to cook at home far more than I ever had before. Eating gluten-free has given me a new found energy, and now I enjoy cooking a lot more. Before, I was just too tired to do it! I love Allrecipes because it has shown me that so many dishes are naturally gluten and wheat free. And others are easily converted with 1 or 2 ingredient changes. Both my husband and I like that we're still eating "normal" food.

Dulce de Leche Grilled Cheese Sandwiches
I love all the ingredients in this individually, and was sure based on the reviews putting them together would be fantastic, but it was just okay. Not bad, but not anything to write home about. I'd rather just dip the apples in the dulce de leche and cream cheese mixture than go to the trouble of grilling the sandwich. But even then, the mixture wasn't that great. The cream cheese added nothing to the dulce de leche, and the dulce took the bite out of the cream cheese.

Crab Cakes III
This is the first crab cake recipe I ever tried, and I'm not going to try any others. I was attracted to it because I have to eat gluten-free, and I figured the small amount of filler would make it easier to adapt. And I was right. I use gluten-free corn-flake crumbs, because I always keep them on hand, but with such little filler, I think rice crumbs or any GF cracker or bread crumb would work. After making this many times, I double the Old Bay, which gives it a little more traditional flavor, but still doesn't overpower the wonderful lemon and basil flavor. I also add a little diced shallot. As far as the sauce, I love it, and it goes wonderfully with the crab cakes. I advise you to try it so you don't miss out. However, I don't make the sauce as directed because of the raw egg. I add the lime juice and spices to a half-half mixture of mayonnaise and sour cream. Not only is it safer, but faster and easier.

Shepherd's Pie V
This makes a fantastic shepherd's pie, though I agree that using all that bouillon would make it way too salty. But I always cook with broth from the carton, and using 1 cup of broth instead of the water, and no bouillon cubes is perfect. With the broth, you can use all the salt and steak seasoning the recipe calls for, and it is seasoned just right. I also always use instant mashed potatoes. This makes the recipe a lot quicker and easier. It's especially tasty with garlic potatoes, and sometimes I will add Romano cheese to the garlic potatoes, an idea I got from another shepherd's pie recipe on this site.
