Mexican Pot Roast

YUM! This is such a great and EASY recipe. I made it for a family event and have already been asked to make it again for the next one. I followed the recipe exactly, except I used pork instead of beef and instead of taco seasoning (I didn't have any on hand) I used some "Mexican Spice". The heat (and much of the flavor!) depends on which hot sauce you use. The first time I made it I used Franks Red Hot because I had a lot of it, and it was good for a crowd. Last night I made it and used Tapatio with a little bit of Ghost Pepper hot sauce. We love spicy food so that was perfect. This tastes great in a taco (CORN tortilla!) with fresh pico and some lime on it. Highly recommend!

Mediterranean Chicken with Eggplant

This was good. Eggplant was a little mushy but I'll chalk it up to my first time ever cooking with eggplant. The only thing I did differently was I only used 4 chicken breasts (that's what I had.) And before baking I sprinkled the top with panko and parmasean. Then for the last few min I put it on broil without the cover. It was pretty good.

Chicken Katsu

Yummy! I made this exactly as the recipe said, but I didn't have a meat pounder so I just cut the chicken breasts into 4 strips each. It worked just fine. I was hoping there would be some leftovers but my fiance, his friend and I devoured it! Next time I might put some hot sauce in with the egg for a little more flavor.

Stuffed Peppers for Two

I cut these lengthwise and zap em in the microwave for 3 min as someone suggested. I keep everything the same except use brown rice (I cook it first or it's hard) and add about a tablespoon of garlic and some Montreal Steak Seasoning (like a teaspoon). They're usually done in a half hour. I like cutting them lengthwise cuz they cook quicker and it is way easier to tell when they're done.

Dee's Roast Pork for Tacos

Yummy. Made in a crockpot on low for about 7 hours. Doubled the recipe for the seasoning, then added half a beer, a minced up jalapeno, and some lime.

Quick and Easy Green Chile Chicken Enchilada Casserole

I made this for my boyfriend and he loved it! I knew I wanted to make it spicy- so I added a jalapeno, cilantro, and lemon to the store bought sauce. It really kicked it up a notch. As suggested in other reviews, I mixed the sour cream in with the chicken. Other than that, I followed the recipe exactly and I would totally recommend it. I used a 9 by 13 pan and I wouldn't recommend anything smaller or bigger - that size is perfect.

Kettle Corn

I too use the 3 kernel 'trick.' Right after they pop, I take them out. Then I add the sugar, stir it around a bit. BUT NOT FOR TOO LONG!! The first time I made it I made the mistake of waiting for the sugar to cook all the way down. The popcorn ended up tasting like burnt sugar. But if just stir it around for like 10 seconds and then add the popcorn, it turns out perfect. The 3 seconds on and 3 seconds off also works well.

Oatmeal Peanut Butter Cookies

YUMMM. These are so good. The only thing I did different from the recipe was that I used butter instead of margarine (personal preference). Also, I added about a cup and a half of chocolate chips. These disappeared QUICK.

My Amish Friend's Caramel Corn

I made this using 1.25 cups of un-popped corn, and the suggested modifications of using butter and baking it at 200 degrees for 45min. I also used the paper bag trick. Worked out perfectly for me, and I am no cook. The first time I made it, everyone loved it and it was gone FAST. I just made it again for tonights pre-Halloween party. Equally as good this time. I'm sure everyone at the party will love it! I just hope I don't eat it all before then. LOL.

Fresh Tomato Salsa

This was the first salsa I ever made. It was really good and relatively easy. I made it exactly as described except I only used 3 serrano chilies. It had the perfect amount of spice for me. And I did seed the tomatoes. It was very good and I would recommend it to cooking novices like me.

Lime Chicken Soft Tacos

Made this for my boyfriend tonight - he loved it! The only thing I did differently was I added 2 minced up jalapenos and cilantro instead of oregano. Mmmmm. We both had 3 and he had enough to take 3 to lunch tomorrow. I think next time I will double the recipe and make some quesodillas or something the next night cuz this chicken is YUMMY
