Vietnamese Fresh Spring Rolls

These are awesome! I used chicken breast cut into long strips. The added cucumber and carrots make it really yummy. I like them short, fat and tight. The fatter it is and shorter it is, I have found that it is easy to keep it really tight as you roll them. I don't like a long, floppy & loose roll! One tip for the wrappers: add hot water to a pie pan and then dip each individual wrapper in the water for a few seconds. It's a good way to get it wet but not too wet. I can't wait to make these again! I see lots of potential to try new combos!

Caesar Salad Supreme

This dressing is outstanding! We love it. I've made it a few times now. I had to make it a bit healthier though, so I split the mayonnaise portion 50/50 with light mayo and plain greek yogurt. I swear you can't tell the difference! So yummy!

Aaron's Chocolate Chunk Oatmeal Cookies

Really good. Really easy. Really fast. My hubby just said these may be his new fave. They are really sweet, almost a bit of an overload. I used a yellow cake mix and butterscotch pudding and some chocolate chips and walnuts. I forgot the vanilla, but still delicious! I would say to bake a lot longer than it says, otherwise they seem too undercooked. I like a bit of a crisp on the edges. Maybe 15 minutes would be good. Thanks!!! I will make again--I think chocolate cake with chocolate pudding & nuts would be so good!!

Pineapple Cheese Casserole

Just made it. Adjusted all ingredients for 1 can of pineapple, because that's all I had. I had all the ingredients on hand and needed to whip up some foods for a cookout. I had to convince others that it was good (because it sounds a little weird) but everyone ended up loving it!

Two Tier Strawberry Pie

soooooooo good! Next time I probably will not use as much of the strawberry glaze & maybe add additional fresh strawberries on top of the glazed part (it was really sweet!). I also used the whole 8 oz. block of cream cheese, like others did. The cheese part with a graham cracker crust would be soooo good with fresh blueberries (or any berry, for that matter) on it--I may have to try it that way next time. Anyways, it was DELICIOUS!!! Thanks!

Graham Cracker Crust I

Perfect crust. Made my own crumbs with rolling pin, plastic bag & graham crackers. did not use cinnamon. I made the two tier strawberry cheese pie recipe on this site with this crust . . . to die for!!! thanks I will use this recipe again!!!

Sangria! Sangria!

this was delish--and super strong! The fruit does an awesome job of hiding exactly how intense this sangria is! I added extra cherries. we also used ginger ale instead of club soda. Definitely let it all marinate over night . . . it tastes completely different (better) that way! I used cheap box red wine (which is why I made sangria in the first place). We didn't like the box wine, but it would've been alcohol abuse to throw it away, so I found this recipe to save it. It worked!!! Thanks!

Boston Baked Beans

I'd probably give these about a 4.5 stars. They were really really good. I mainly made these because I had all the ingredients on hand and I wanted to know how much better they were than store bought/canned baked beans. Honestly, they were delicious, but canned (Bush's) are really really close to being just as good. I did use 2 cans of white beans, one being navy beans and one was another kind of bean. We made the bacon up (to drain the fat) and then crumbled it to add in the pot. I would make them again (just to say, "they're homemade!"), but canned are pretty much just as good.

Tasty Lentil Tacos

Really good! My husband just walked in the door to an awesome aroma and I made him try the lentils on a tortilla chip (while he closed his eyes). He thought it was really good taco meat . . . then I told him what it was! He ate a whole bowl of it with the tortilla chips. I did a few things differently (of course--I normally do!). I added jarred minced garlic instead of fresh (that's all I had). I added about 2 T. fresh sofrito (Puerto Rican spice--I just had a friend make me a batch, so I threw some in there). And a sprinkle of Adobo seasoning in addition to the other ingredients. I only added a little bit of jarred salsa, because I wasn't convinced that it really needed it (it doesn't really). I can't wait to share it with the rest of my family (who is really into legumes!). I think it would be delish as a taco salad, like others have said.

Baked Pork Chops I

I was really excited to try this based on the reviews, but I was careful to read all the other reviews first (there are always great tips to "perfecting" the recipe). I am giving this four stars and not five because of the gravy/sauce. Otherwise, the pork chops alone would get 5 stars! Baking time was way less than the recipe states, by the way. The gravy needed A LOT of work . . . boy, was it bland & flavorless!!! In addition to the mushroom soup, I added a can of golden mushroom (like others suggested), a dash of parsley, seasoning salt, garlic powder, sage, and thyme. I still felt like it could've been improved more, but on the other hand I'm never "fully satisfied" with any recipe!! Anyways, I would definitely make it again--my husband LOVED it & always says, "Country cookin' makes you good lookin'."
