I made these as written and they came out great! I followed another reader recommendation and made Amy's creamy cilatro sauce to go with them which was a perfect combination. At that point I decided to make a beef and seafood version of these and make it a dipping meal. For beef I had some leftover pumpkin turkey chili (from this site) which I mixed with mexican cheese blend and wrapped them up in 10 inch tortilla's, fried them then served with caso cheese sauce. For the seafood I used imitation crab mixed with red onion, garlic, red pepper, black olives and mixed in some monterey jack cheese, then fried. i paired the crab wrap with peach mango salsa. yummm... I found that 10 inch tortilla's work better and next time I will bake these instead.
