Turkey Pot Pie I

I've only made the stew/filling part of this so far, and it is out of this world. My changes: Doubled the recipe; Substituted half the carrots with parsnips; Substituted half the water with leftover gravy and white wine; added a splash extra water; Left out the bullion (the gravy & white wine were plenty of flavor), added chopped fresh thyme; used a mixture of half & half and skim milk instead of milk. This came out so savory and flavorful. The ultimate comfort food. It would be great on its own as a stew. I'm going to bake it tonight in a casserole dish under biscuits for old fashioned pot pie. We'll still have a couple meals worth left over for the freezer.

Easy Corn Pudding

Delicious, fast, super easy, and always a hit on Thanksgiving. It's so fattening, so I only make it once a year, but boy is it popular!

White Bean Soup

I love this recipe--I make it all the time and freeze the extra. It's a perfect lunch with a slice of good toast. I use veggie stock instead of chicken, making it vegetarian, and frozen corn instead of canned (which I think is healthier). I also sometimes used canned diced tomatoes if I don't have fresh, and I never have savory, so I use whatever herbs I have on hand--usually thyme, sage, and/or oregano. This is very tasty and satisfying, and also low calorie and healthful.

Cold Oven Popovers

Oatmeal and Wheat Flour Blueberry Pancakes

Tasty and somewhat healthy. I used buttermilk instead of soy and applesauce instead of olive oil and I cooked in veg. oil. The batter was really thick and I ended up adding about 2x as much buttermilk as called-for soymilk. They were still too thick to cook all the way through. Next time I will add even more buttermilk or maybe just skip the oil/applesauce completely.

Vegetarian Four Cheese Lasagna

Delicious--A huge hit with my family and dinner guests. I baked the eggplant rounds on a cookie sheet at 425 for 15-20 minutes, which is healthier than frying. Next time I will make it with canned pumpkin, as the taste of fresh pumpkin is not worth the hard work of extracting it.
