Grain and Nut Whole Wheat Pancakes
I loved it and my family loved it. I didn't have oatmeal so I substituted it with baby oatmeal cereal. (Actually was really good.) I accidently added 1/3c of oil. I misread the recipe. I added 1/2 tsp of pure vanilla and used fat free milk. Half the batter had crushed nuts and the other half had a few chocolate chips added to each pancake on the griddle. Yummy!

Easter Breakfast Casserole
Made christmas for brunch and the family loved it. Made some minor changes because of what I had in the fridge. I used small roasting potatoes. Peeled and cubed them and then cooked with the green peppers and onions with a little canola oil and bacon grease. Then I mixed it with the egg mixture (using half evaporated milk and half lowfat milk). Used less cheese (about 2 cups) and baked in a 9X13 casserole dish for 55-60 minutes covered with foil. Delicious!

French Toast Casserole
Made this christmas for bruch and the fam loved it. Only changes I made was to cover with seran wrap and place cans on top and refrigerate for 1 hour before I put in the oven. Also used half evaporated milk and half lowfat milk. While baking I covered it with foil. Top with strawberries and cool whip and was divine.
