Scottish Shortbread IV

These are delicious! So easy to make. The first time I made them, I just used a knife to cut them into rectangles. Well, I clearly can't cut a straight line... tasted great, but weren't too pretty. Today I used a square cookie cutter, then pricked the top of each cookie with a fork. Much better looking. Pretty enough for gifts during the holidays. I was able to knead, roll the leftover dough and keep using the cookie cutter until the dough was gone. They took 25 minutes to bake in my oven.

Pumpkin Spice Cupcakes

I have made this recipe twice in the past couple of weeks. They are very easy to make and tasty. I made mini-cupcakes and the recipe made 48 cupcakes. I followed the advice of other reviewers and used oil instead of butter and increased the spices to a rounded measuring spoon. Since I was using a mini-cupcake pan, they only took 13 minutes in my oven. They were delicious. I increased the frosting by 50% and piped it on so it was nice and thick. Plus, they looked really pretty. It is a great fall/Halloween/Thanksgiving recipe.

PHILADELPHIA Pumpkin Swirl Cheesecake

This cheesecake is pretty darn tasty. I made it earlier this week to try it before the big T-day. The only changes I made were to bake the crust for 10 minutes at 350 degrees. I let it cool, wrapped the pan in two layers of heavy duty foil, poured in the filling and baked the cheesecake in a water bath. I think the water bath gives you a creamier texture. At any rate, it was delicious. I also found it tasted better the next day. The flavors seemed to intensify. I will definitely make one for Thanksgiving!

Sesame Pasta Chicken Salad

This is pretty darn good. I did what so many other reviewers have done - decreased the oil to 1/3 cup and added veggies. Snow peas, grape tomatoes (cut in half) and julienned carrots. Sliced water chestnuts would be delish. I blanched the snow peas for 2 minutes and they were overdone. Next time I will add them raw or blanch for just one minute. I might try the sugar snap peas instead. I added the dressing to the hot pasta so it would soak up more of the flavor. I'm not sure if that really made any difference. However, once it sat in the refrigerator overnight, the flavors were much better. My husband and I both liked it better cold.

Savory Garlic Marinated Steaks

Note to self - when you are not too fond of balsamic vinegar, don't make a recipe that has it as a prominent ingredient! I can see why so many people enjoy the flavor, but we were kind of so-so on this one. Just one of those personal taste issues. There isn't anything wrong with this recipe and if I make it again, I will use red wine vinegar and probably even out the vinegar/olive oil ratio. I thought the steaks would have a strong garlic flavor, but all I really noticed was the balsamic.

Lemon Cake with Lemon Filling and Lemon Butter Frosting

Fantastic! I have made a different recipe of lemon curd before and the instructions from that recipe had you pour the curd through a fine mesh strainer, which I did with this recipe of lemon curd as well. It was nice and smooth. I doubled the frosting recipe because I do not like to scrimp on the frosting. It was more than I needed and next time I will just increase it by 50%. I followed the suggestion of another reviewer and did a "crumb" layer of frosting when finishing off the cake. This made the cake very easy to finish frosting. It is very impressive when you slice it.

Southwestern Chicken Barley Soup

This is very tasty! I have been following Weight Watchers and this is a great addition to my recipe file. (1 cup = 5 points). I did substitute PAM for the vegetable oil and I used 1C. of frozen corn instead of canned corn. Delicious! This is a very flexible recipe and changes can easily be made to suit your individual tastes. Vegetarians could delete the chicken and chicken stock; add another can of beans (or 2) and use vegetable stock. There are lots of options. I found the seasoning just right. I reheated a serving for lunch today and added about 1 tablespoon of water to thin it out a little. Again, very tasty.

Red Velvet Cupcakes

I must admit - I have never had a red velvet cupcake before, but I decided to make some and see what all the fuss was about. Well, I am not super impressed. First, they are not very red, despite the entire bottle of red food coloring. They look more like a chocolate cake. Second, they taste like cake that doesn't have enough chocolate in the recipe. From what I have read, I actually think these have too much cocoa powder for the classic red velvet cake. I think I will keep looking for a better recipe. However, I thought the texture was great, the cream cheese frosting delicious and they were easy to put together. My hubby is happy - we are having biscuits tonight because I want to use up that buttermilk!

Hamburger Steak with Onions and Gravy

I made this for dinner when it was the Recipe of the Day - yummy. Easy and did not take long to get it on the table. My husband loved (!!!) it. I doubled the ingredients for the gravy as so many other reviewers have done. I served it with mashed potatoes and roasted vegetables. Thanks Anne Marie!

Italian Sausage Soup with Tortellini

This is a great recipe and very flexible. If you stick with the basic ingredients, you'll have a great soup. Don't have any wine - add more broth. Don't like zucchini - omit or add something else. Lots of green beans on hand - throw 'em in. Personally, I used sweet sausage and canned tomatoes. My husband isn't fond of zucchini, so I added it whole, removed it when cooked through, pureed it in the food processor and added it back to the broth. I served a spinach salad and garlic bread and both complimented the soup especially well. Dinner was delish!

Disappearing Marshmallow Brownies

These are certainly easy to put together. The marshmellows just melted into the batter and the "lumps" on the top were very crumbley (not sure if that is a real word!). I thought they tasted better after a day or two. I took most of the pan to work and they disappeared quickly.

G's Flank Steak Marinade

I am not sure how I have gone so long without grilling a flank steak... this is delicious. Easy too. I knew when I was mixing up the ingredients for the marinade that it would have a teriyaki flavor. Yummy! I used low-sodium soy sauce and didn't feel any extra salt was needed. I marinated the steak for about 10 hours. My husband and I felt it had plenty of flavor. The flank steak wasn't expensive and considering the left-overs - it is a good deal and something I will make again.

Marinade for Chicken

This is yummy! I cut the recipe in half and used it for chicken breasts and legs. We ate them at a picnic and everyone enjoyed the flavor. I felt the marinade gave the chicken plenty of flavor. It is nice change from bbq sauce.

Chocolate Cream Pudding

The flavor was good. I didn't care for the texture very much. Not as smooth and creamy as I like. If I make it again, I will try a different kind of chocolate. I used Scharffen-Berger (unsweetened) and I think that might have been the problem.

Mom's Pumpkin Pie

I am very disappointed... I decided to give this pie a try before Thanksgiving - thank goodness I did. It will not be on the table for T-day! I followed suggestions from other reviews, bought sugar pumpkins, baked them and pureed the pumpkin. I decreased the milk slightly. The pie has very little pumpkin flavor. I'm willing to admit it might be the pumpkins I used, but I'm not sure how to solve that problem. Plus, it is a unappetizing brown color. It took an additional 25 minutes to bake. Sorry Jim, but I am going back to my own mother's pumpkin pie recipe.

Orange-Glazed Cornish Hens

I'm giving this recipe 3 stars because the cornish hens were so-so. However, the rice is fantastic. My advice - do not ruin the rice by stuffing it in cornish game hens! It is easy to make and compliments many main dish meals. Tonight I served it with bar-b-qued teriyaki steaks. Delish!
