Catherine's Spicy Chicken Soup

Great, hearty, spicy soup. I would have given it 5 stars, but I have to agree with other reviewers about the tomatoes called for in the recipe. I ommitted the second can of diced tomatoes and the can of whole tomatoes. I would also reduce the amount of soup, but my husband thought it was fine. Do be careful, this soup is spicy. My husband and I love hot foods- our favorite recipe includes habanero peppers- and this soup was perfect for us, so it may be too much to take for those who prefer milder dishes.

Tasty Lentil Tacos

Great recipe! I had to add more liquid than the recipe states (and used beef broth as others suggested) and cooked the lentils a few minutes longer than called for. Otherwise, it was great; my meat-eating husband gave his approval and everything!

Jalapeno Popper Spread

Fantastic recipe! It was the hit of the graduation party. I did take the advice of other reviewers and add buttered breadcrumbs to the top for a little "fried" flavor. Next time, I will also use a more shallow casserole-type dish as opposed to a bowl for more topping per dip.

Indian Chicken Curry II

Great home substitute for expensive restaraunt food. I made enough sauce to freeze for an easy dinner another night. We found it to be a bit sweet, so next time I'll tweak the sugar/coconut milk amounts.

Greek Lasagna

My husband and I love this dish. I do agree with other reviewers in that it can be dry. I will double the sauce recipe the next time I make it. And to those who find it "bland," yes, it is a mildly flavored dish, but it is very simple to alter the amount of spice in any aspect of the dish.
