Broken Spaghetti Risotto

I've been making home-made type "Rice-A-Roni" dishes for years. It started out simple because I didn't have any when my kids asked for it. Using the box technique of browning the spaghetti & rice in butter, adding stock, seasonings, covering and simmering. The kids never knew the difference. As yrs have gone by, this is my go to for a quick and easy scampi dish. Adding rice, lemon, shrimp, lots of garlic, red pepper flake etc. You can make this dish into just about anything for either a side or main dish. Serving with cooked chicken breasts (any way, think lemon chicken for one) on top with an array of seasoning options, fresh parsley...the possibilities are endless. To give this a poor rating just means you have to broaden your imagination and not be afraid to try as written and experiment. Excellent recipe to put out there...Thank you for sharing with others Chef John!

Best Lemonade Ever

Jo, I just finished making your lemonade. If I could rate it 10 stars I would! From start to finish I was done in 10 minutes (using an electric juicer to accomplish that). Another viewer stated that she cut the sugar to one cup. Knowing you can add & not take away, I started with 1 cup simple syrup in fear it would be too sweet. Well, as the saying goes "Don't mess with perfection", I added the rest of the 3/4 cup simple syrup and VOILA! The perfect blend of sweet and tart. This truly is the "Best Lemonade Ever". It took me back 45 years to my front yard with my 1 cent lemonade stand! Thank you for the memories and taking the time to post your recipe.

Delicious Ham and Potato Soup

Awesome soup! Like others, I adjusted according to the reviews. I used chicken stock instead of water, added thyme, garlic powder (was an after thought, next time I'll use fresh garlic,) wasn't sure on the celery but, decided to add it anyway and I'm glad I did. I also added a frozen peas/carrot mix. I agree with taking your time with the roux, it will produce a very thick rich creamy soup. I added shredded cheddar to the roux before adding to the soup. My husband said anyone who didn't care for this soup is crazy & doesn't have a taste bud in their mouth and he's not a big soup fan. Thank you for a great recipe!
