Peanut Butter Oatmeal Cookies

Being on a diet I had a sweet tooth and wanted to eat something sweet. I used butter instead of shortening, splenda brown sugar blend, instead of brown sugar, and low fat peanut butter. I found these cookies to be excellent considering the ingredients and the ease to make.

Oven Brown Rice

This was excellent! I made a few changes as other reviewers suggested. I used 2 tbsp. olive oil and omitted the butter. I used 2 Tbl. minced garlic and about a tsp seasalt. I used 2 cups of low sodium beef broth cooked it for 1 1/2 hours (uncovered) at 350. My family loved the rice, and I love a healthy alternative to white rice, and very simple. I served this with Super Spicy Mongolian Beef (from this site) and it was an instant hit.

Super-Simple, Super-Spicy Mongolian Beef

This was awesome. I marinated the meat for 24 hours. Instead of red pepper flakes I used 1 Tbl of Mongolian Fire Oil, which added a hint of fire but nothing you need a drink close by for. I also cooked half a white onion, half a red onion, 1/2 a cup of left over red bell pepper and some julienned carrots. Cooked the Onions and Peppers separately in a Tbl. Sesame oil and a Tbl. of Mongolian Fire oil (found in the Asian section of your local grocery) and a Tsp of minced garlic. I used sirloin instead cutting into thin strips. Mixed the Veggies back in at the end and then served it over Oven Brown Rice (found on this side). I have an excellent local Mongolian restaurant we love, sad to say I can now make it better, cheaper, and faster at home. This dish is defiantly going into the dinner rotation!

Bolognese Stuffed Bell Peppers

First, I hate bell peppers but really wanted to try this dish, I am soo glad I did. I used 4 red bell peppers and made this exactly as the recipe calls with one addition I mixed panko bread crumbs with the parmesan cheese topping to give it a light golden crispy taste and look. The presentation was right out any gourmet cook book photo. The taste was out of this world. My brother hates bell peppers and absolutely loved this dish going back for seconds. I will make this often.

Dad's Pan-Fried Green Beans

Excellent and easy! I used 1lb of frozen green beans, 2 Tbl. sesame oil, and 1 Tbl. minced garlic. Once the green beans start to brown I add the soy/balsamic sauce. I hate green beans but this is out of this world, I make this often and eat it like candy.

Molten Chocolate Cakes With Sugar-Coated Raspberries

I made this for some friend who came over for dinner, we had all had this on a cruise but the home made version with Ghiradelli Chocolate was hands down the best dessert I've ever tasted. I will make this sinful delight very ofter.

Chicken Fried Steak I

This dish was alright, I love chicken fried steak so my expectations my have been too high. The Steak was a little bland but did have a hint of a good taste. The gravy was aweful, I will not be trying this dish again.

Perfect Flat Iron Steak

I'm a Texas boy and I've eaten nothing but grilled steaks my whole life. I was really unsure about the marinade and pan frying a steak but decided to take a gamble. Boy, was I surprised, the steaks turned out tender and juicy with the perfect flavor to accent the great taste of the meat, not over powering, and defiantly not undetectable. If you are looking for a restaurant quality steak without having to own a grill, this is it. 5 Stars all the way.

French Onion Soup Gratinee

I made this exactly as directed and it turned out so well my wife wanted to ban my from entering her kitchen and showing her up. I can't stand French Onion Soup it always taste like wet cardboard covered in cheese and I always look at it on the menu and pass knowing I will be let down. This recipe however burst with flavor and is soo simple to make I honestly played video games while cooking this.

Barbecued Beef

Here in Texas there is a place called Rudy's that serves the best brisket period. Just like Rudy’s this brisket falls apart and melts in you mouth with a hint of fiery spice and a smoky powerful flavor. I made one substation to this recipe and it was extremely close to the best I've had. I highly recommend adding 1 1/2 cup Heine’s Thick and Spicy barbeque sauce instead of the ketchup.
