Corn Dip II

Everyone loved this, including me! I did add green and red pepper diced, less mayo and I split it in half and baked 1/2 since my friend's son was helping me and we thought it would be good warm. Brought out flavors more we thought, so better warm but still good cold!

Gooey Butter Cookies

Downeast Maine Pumpkin Bread

I should have stuck with the original [instead of following other review advice] as I only used 2 cups sugar and it wasn't quite sweet enough for me. I was surprised with all the spices that it lacked flavor & I LOVE pumkin bread normally. I am giving it 4 stars because I didn't follow exactly-and hopefully as it says it will improve tomorrow!

Cheese Sauce Over Cauliflower

Not sure if I should do 5 stars, or review, since I had no thyme, but I added minced fresh garlic to butter and this was awesome! My 3 year old was asking for more spoonfuls of it as I was finishing it. Oh I used dried parsley also. I think you could add many different spices to this. I forgot paprika too!

Crab Pasta Salad

Not sure if it is fair to rate it, but it gave me good base idea! I used some imitation crab, some real canned, used a frozen stir-fry mix for veggies and added I pretty much followed dressing except for a little less mayo & more parm.

Spicy Three Pepper Hummus

This is a fun new hummus recipe, and since I make hummus atleast once a week, I have to mention that there is not nearly enough liquid in this, if you are going to use food processor [or magic bullet] like I do. I always add mix of oil, water & lemon juice in my hummus. Basically the beans need to be covered in liquid. Still stays plenty thick!

Shrimp and Asparagus

So good! I did as another suggested and just cooked asparagus in same pan, making it easier AND it would have been too done for my tastes otherwise. I used way less butter and olive oil. I also did rice instead of noodles cause it sounded good. Will definately make this again!

Kielbasa and Potato Bake

I enjoyed this but it was done after 70 minutes cooking [would have had to cover with foil or let it burn] and as my potatoes were not very large I used less milk, about 1 1/2 cups.

Crab and Swiss Quiche

I really liked it, but my father didn't say much...I think it needed onions or spices. Also make sure you use a shallow pie dish, if you follow recipe, cause it only filled my deep dish pie pan halfway, I knew it would with only 2 eggs, but like to follow recipes the first time!

Vegetarian Shepherd's Pie I

This was edible, but don't think I will make again. To be fair I used rice milk as I try to avoid animal products. Can't imagine that one thing would make it much different though. It was better with "Punk rock chickpea gravy" from Vegan with a vengence cookbook.

Thai Peanut Butter Sauce

This is SO dang good! I have made it several times now, and it goes good with all stir fry veggies. I use less cayenne and chunky peanut butter. I think it is best added to hot pan of veggies and noodles at end of cooking to let it soak into everything. MMMmmmm!!!

Quinoa and Black Beans

I enjoyed my first experience with quinoa. I used this as a taco filling AND the next day I stir fried it with breaded tofu leftovers and spinach. Good stuff! I will say it took longer than recipe stated for the quinoa to cook.

Banana Bread VIII

This was excellent! I have been trying to eliminate any animal products from my diet, and who knew you could make BETTER banana bread with no egg in it!!! I only had 1/4 cup shortening so I added 1/4 cup applesauce. I intended to add vanilla and cinnamon, but forgot....might try that next time, but again this was great as is!
