Vegetarian Chili

This was easy and delicious and my family loved it. We each had a bowl of chili with a large salad for dinner. I froze about half of it and it was just as tasty (if not more so) when defrosted and reheated a couple weeks later. I added shredded cheddar cheese and a dollop of sour cream on each serving. It went over very well!

Orange Pumpkin Loaf

This was a huge hit with my family and in-laws. I used 1 cup of fresh pumpkin puree rather than using canned pumpkin. The first time, I baked two mini loaves and had enough batter for a few muffins. The second time, I made one mini loaf for my family and made 9 muffins with the remaining batter. As a loaf or as muffins, this recipe is moist and delicious.

Chicken, Spinach, and Potato Soup

This soup is packed with nutrients. It was a huge hit with my husband. I made a few changes, and it came out great. I used 3 cups of chicken stock and 3 cups of water (rather than 2 and 4, respectively), a little more chicken than recommended, and a 25-oz can of chick peas. Instead of 2 potatoes, I chose 1 russet, 1 golden yukon, and 1 sweet potato for variety. I left out the red pepper and Parmesan cheese, but added the rest of the ingredients as written. To make the meal special, I served the soup in whole-wheat sourdough bread bowls.

Savory Crescent Chicken

This was easy and delicious. While cooking the chicken (which I simmered in broth), I added a small white onion, two garlic cloves, and a few handfuls of spinach leaves. This mixed easily with low-fat cream cheese and margarine. I slipped the pimentos.
