Pumpkin Pie for Dieters

Pumpkin pie is one of my favorite all-time desserts, and this recipe satisfies!! I make the recipe pretty much as is, only I use sugar-free, fat-free cheesecake pudding mix. I then make a crust with 5 low-fat graham crackers and two tablespoons of melted Brummel and Brown, baked for like 8 minutes. Fill the crust and FREEZE! Pumpkin ice cream pie! Top it with the remaining Cool Whip lite and dig in. At about 142 calories per slice, this is an indulgence you can have anytime!

Spooky Witches' Fingers

This was such a hit! They actually looked just like witches fingers! I added an additional 1/2 cup of confectioners sugar and kneaded in some green dye, and they were spooky and delicious. Very very good with coffee the next morning! Not too sweet, just a perfect little bite. They definitely take some time to do well, but it's so worth it!

Chocolate Banana Bread Pudding

This was outstanding! I left out the chocolate and added golden raisins, added a third very ripe banana (mashed) to the liquid mixture and grated in some fresh nutmeg. I also used 1/2 cup of light brown sugar and 1/4 cup of regular sugar. Served it with a caramel bourbon sauce. Everyone gobbled it up!

Easter Breakfast Casserole

This casserole was a big hit at our Easter brunch. Like other suggested, I lined the pan with the potatoes and baked them for about 15 minutes before adding the egg mixture. I also used a combination of sausage and bacon and used sweet peppers and scallions. Delicious!

Beef and Irish Stout Stew

This was absolutely delicious...even better the second day! I made it for St. Patrick's Day and served it over mashed potatoes, and everyone loved it. Hearty and very satisfying!

Super Bowl Bites

These were just okay to me. They were a little bit bland for my taste. The bread was dry, but that's because I didn't use the ready-to-bake rolls but rather already prepped bakery rolls. Will try them again with a little more spice and the ready-to-bake rolls.

Chocolate Cherry Cake I

I gave this recipe to my mom, and she made it for the Superbowl party. It was oustanding! This was a my favorite dessert as a little girl, so it really took me back. The edges were a little dry, but other than that, it was total chocolatey goodness!

Easy Decadent Truffles

These were outstanding! They were very messy to make, but the end product was delicious. I rolled half in cocoa powder and half in crushed walnuts and put each in an individual mini cupcake cup. They were a HUGE hit! One of the girls told me I should make them and sell them for Christmas!

Boneless Garlic and Rosemary Rubbed Prime Rib with Red Wine Mushroom Sauce

I used a five pound bone-in Angus prime rib, and it was spectacular! The beef was amazingly tender and perfectly flavored. I served it with a mushroom gravy or horseradish sauce, boursin mashed potatoes and roasted asparagus. What a hit!

Pumpkin Cheesecake

This turned out perfectly. I left off the sour cream topping and piped on some vanilla flavored whipped cream before serving. It was a hit! My husband, who is not a huge sweets fan, finished up the leftovers in 2 days! Everyone raved about it. Exceptional flavor!

Oatmeal Chocolate Chip Cookies III

This recipe is awesome! I added dried cranberries instead of raisins, and my husband was blown away. No eggs and a butter base make these little delights thin and crispy! These are going on my permanent rotation.
