Homemade Black Bean Veggie Burgers

One of the best dishes I made this month! You can substitute or add corn kernels to the burgers for more texture and flavor, but not necessary! Tastes very healthy since I baked them in the oven - no oil! This recipe made 4 good size patties. We ate them all up and I immediately made another batch to have for lunches. I made a chipotle mayo dressing which was exactly the touch it needed! (Some mayo and a dash of ranch dressing in a blender with two or three canned chipotle peppers to taste. GO EASY, they are extremely spicy.)

Vietnamese Tofu Salad

This salad was okay. Not the greatest, but I may make it again some time. What I DID love was the first half of the recipe (ginger, garlic, peanuts and tofu) served hot over rice. I enjoyed that more than finishing the recipe and turning it into a cold salad. Try it! I give the "unfinished" recipe 5 stars!

Baked Tofu Bites

I followed the recipe exactly, and added some fresh ginger. I thought it was delicious! I was skeptical because before cooked, the sauce smells gross and unappetizing. Once cooked, it smells delicious! I served this over rice. When I took it out of the oven, all the sauce had absorbed into the tofu, so it was "dry" but flavorful. I will certainly make this again!
