Caldo de Res (Mexican Beef Soup)

I have been making this soup for many years, my husband is Mexican and he and our 3 children love it. My recipe is very similar, I do add some minced garlic and I have used stew meat when the shank was not meaty enough, we like a lot of meat in this. I don't use beef broth but instead I use water and beef stock base. Also cumin is a must in this recipe at least a teaspoon or two. I have also frozen this with great results, it does make a lot! Be sure to add the cilantro near the end of cooking and be sure to squeeze lime juice into your individual bowl before eating with a handful of corn tortillas.

I have been making these for years, as my husband is Mexican. We break the corn tortillas into chuncks and fry in a bit of veg. oil till a little crispy, then add egg mixture and cook until eggs are done, flipping once. We use all sorts of leftovers to make this, hot dogs, chorizo, sausage and bacon. My husband even tried it with leftover pizza leaving out the corn tortillas, the crust subbed for that and it was very good!

Speedy Cinnamon Rolls

These have been a family favorite for over 10 years! They are soooo simple and soooo delicious. Bar far better than the other recipes requiring you to make the dough yourself. I put the frozen bread dough into greased loaf pans and cover with plastic wrap before I go to bed and in the morning whip them up in no time. I cut mine into 12 and put 6 in each pan, I also tend to use a bit more whipping cream and it makes them all that much goooier! YUM

Spooky Witches' Fingers

I made these for the first time last Halloween, sent them to college students and they loved them! They told me they were the cutest things they had ever seen. Taste of the cookie was a 4 but the appearance a 10! I sliced mine down the middle and added some red gel to the inside then pinced it together and when you bite into them it looks like blood inside. I used sliced almonds for the fingernails and added small "cracks" with a knife for the knuckles.

T-Bones with Onions

Very good! My husband cooked the t bone on the grill for 8 min each side and I had the packet of onions all ready for him to put on the grill. The onions were very tasty and the steak- YUM! I did drizzle the onions with a bit of E V olive oil too, not sure I needed to but they were good, I may try it without next time.

Pepper Jelly Appetizer

This is a great appetizer, even better when you make the jelly using the Hot Pepper Jelly recipe from this site! People always request a jar when I take this places and it makes a great hostess gift as well.

Best Bread Machine Bread

This was very good! I did not disolve yeast like it said, as I set the timer on my machine. I added liquids, sugar, flour, salt and lastly yeast. Came home to perfect loaf of bread! The second time I made this I stayed at home, so I did desolve the yeast like it said, used canola oil and 1.5 teaspoons of salt and the loaf was better than the first. Great recipe!!!

Whoopie Pies

Tasted good, but very flat. I used a strawberry cake mix that might have been the problem. Didn't use this filling recipe either.**REVISED** Made again using strawberry cake mix and sm pkg vanilla pudding, much better texture to the cakes with the pudding, also used the mommabailey recipe for filling, only I added twice as much powdered sugar and the entire 7oz of marsh. fluff, milk as needed to smooth it out. These were a huge hit!

Chicken Pot Pie IX

Very good recipe! My husband even asked if I could freeze some! Took a couple of shortcuts. Used half a bag of frozen, mixed veg and a large can of veg-all (larger cut veggies that included the onion, celery, carrots and potatoes). First I cubed the chicken breasts and cooked in chicken broth till tender 10-15 min, then added the veggies till warm, then made the sauce and I actually made half a recipe more of the sauce than it called for. I too added some poultry seasoning. I used a pre-made crust, so this was in the oven in no time. I didn't have a problem with a soggy bottom crust either.

Out of this World Turkey Brine

Lots of compliments on my turkey this year! I used 2/3 c. brown sugar and one quart of veg. stock in place of the water. I only brined for 12 hours, will try it for longer next year. I roasted in the oven and it was fabulous!

Granny Kat's Pumpkin Roll

Not as hard as it would appear! I was looking to use up some pumpkin pie spice and that is why I chose this recipe. I pretty much followed the recipe except for a couple of minor things, one I used an 11 x 15 pan lined with parchment paper; be sure to spread the batter pretty evenly, it does not rise like a cake from a box it comes out pretty much like it goes in. Two, I sprinkled the powdered sugar directly on the cake and put the damp towel over it and flipped it out; rolled it up as stated to cool, spread the filling on, added chopped walnuts to half the filling and rolled it up. The final rolling was my only hang up and at first it was because I was trying to roll it too tightly, just lift the towel and let it roll like that, it is perfect. I too wrapped in plastic wrap and then in foil to refrigerate. This really was very easy and quick as well.

Penne with Spicy Vodka Tomato Cream Sauce

Pleasantly surprised at how good this was! I have tried the jar vodka sauce and this was SO much better. Pretty much followed the recipe except I accidentally opened a can of diced tom. instead of crushed so I used it and blended it with the hand blender and it turned out just fine. I used a mini bottle of vodka and ziti instead of penne. I will double the sauce next time because I thought it could definitley use more, I didn't even add the entire box of cooked pasta because I didn't have enough sauce. After initially tasting thought it needed just a little something more so I added some onion and mushrooms, a sprinkle of basil, oregano and black pepper topped off with grated parm. cheese. My husband has already requested this for an upcoming fishing trip.

Coconut Pie

WOW! This was very tastey and a snap to throw together. I don't even like coconut and I loved this pie. I do like custard and the filling on this is like a custard with coconut. It really can't get any easier than this recipe and it baked up picture perfectly.

I don't eat avacodo, however my husband loves this and I will be making it over and over for him, followed directions exactly. I did have some left-over so I added some fruit fresh to it so it won't turn brown. I also left the pit in the container.

Did not like these at all, tasted nothing like the ones at the mall and very time consuming. I make one with frozen bread dough and whipping cream that is extremely easy and much better tasting!

Raspberry Ribbons

Family loved this new addition to the cookie tray and these are probably the easiest as well. I always use parchment paper for baking and I did use wax paper between layers when storing. I also used half and half for the frosting. My husband has sugar issues so I tried using splenda blend for sugar and half canola oil instead of all butter. I also used low sugar spread for the jam. Someone else posted that the low sugar didn't do much for the flavor so I did stir in a bit more splenda into the preserves before I put them on the cookies. It really wasn't that bad, certainly not as good as originally written but not bad if you need to watch the sugar. Low sugar spread tend to "leak" off the loaves also so keep that in mind when applying the spread to the loaves. I also made a few like thumbprints instead of the loaf and they were great also. I will make these again both as written and with changes for my husband.

Chocolate Zucchini Bread I

This turned out great! I don't usually make a lot of changes but recently my husband found out he has diabetes so I made a number of changes so that he could enjoy this. First I used liquid unsweetened chocolate, 3/4 C of canola oil ( I would have tried half applesauce but I was out of it--next time) 3/4 C fake eggs, splenda sugars 3/4 white and 1/4 brown; you only use half of the sugar needed when using spelnda baking sugar. I also mixed in a banana. This was really good and I will make it again. I did flour the chips and I added pecans to the flour before adding to the batter. I used pam/w flour for the pans and had no problems getting loaves out. This was a huge hit and actually I may even use less sugar next time it was a bit sweet.

Ultimate Cranberry Pudding Cake

I really wanted to LOVE this recipe, as I have tasted the steamed cranberry pudding and LOVED IT. The ingredients are similar but cooking methods must make the difference. This was ok, but I probably won't make it again. I did follow directions and it looks wonderful but the taste was just ok. Extremely heavy/dense cake. Guess I need to break down and buy a cake mold/steamer and try that.

Jalapeno Popper Spread

WOW this was really great! It really tasted exactly like poppers. I pretty much followed directions, however; I could not find canned diced jalapenos, I bought a 7 oz can of pickled jalapenos, diced them and added. I did not feel it was hot at all so I added 5 fresh diced jalapenos, still really no heat so next time I will add some of the seeds. I used the green chilies, 1/2 c miracle whip and 1/2 c sour cream. Added half the grated cheese to the mix and the other half to the top with the panko bread crumbs sprayed with pam (for bit of browning) and popped in the oven at 350 for 20-30 min. Served with toasted bread and ritz.
