Phyllo Chicken Packets

These were very good and easy to make. This was only my second time using phyllo and I did take suggestion of others and used butter spray instead of butter. I used 3 sheets per breast. Mine did take longer to bake so I may pound thinner next time. Also these are not so good as left overs, the phyllo is much better when it comes out of the oven vs the frig.

Penne with Spicy Vodka Tomato Cream Sauce

Pleasantly surprised at how good this was! I have tried the jar vodka sauce and this was SO much better. Pretty much followed the recipe except I accidentally opened a can of diced tom. instead of crushed so I used it and blended it with the hand blender and it turned out just fine. I used a mini bottle of vodka and ziti instead of penne. I will double the sauce next time because I thought it could definitley use more, I didn't even add the entire box of cooked pasta because I didn't have enough sauce. After initially tasting thought it needed just a little something more so I added some onion and mushrooms, a sprinkle of basil, oregano and black pepper topped off with grated parm. cheese. My husband has already requested this for an upcoming fishing trip.

Roasted Chicken with Risotto and Caramelized Onions

Sorry, I like balsamic vinegar but NOT in this recipe. My husband didn't like it either. I may try again less the vinegar the rice was really creamy.

Caldo de Res (Mexican Beef Soup)

I have been making this soup for many years, my husband is Mexican and he and our 3 children love it. My recipe is very similar, I do add some minced garlic and I have used stew meat when the shank was not meaty enough, we like a lot of meat in this. I don't use beef broth but instead I use water and beef stock base. Also cumin is a must in this recipe at least a teaspoon or two. I have also frozen this with great results, it does make a lot! Be sure to add the cilantro near the end of cooking and be sure to squeeze lime juice into your individual bowl before eating with a handful of corn tortillas.

New York Cheesecake III

Great texture! I really did a lot of reading before deciding on this recipe and I chose it because of the crust, GOOD CHOICE! I did use a 10" springform pan lined with parchment paper. I left out the egg in the crust as someone else mentioned and I used only 4 packages of cream cheese. Everything was at room temperature before starting. I did add a teaspoon of vanilla, although I think this could be so versatile by using other flavors. I baked exactly as stated and I did put a 9 x 13 pan of water on the shelf below in the oven. NO CRACKS, PICTURE PERFECT! I chilled for 18 hours and added raspberry topping and whipped cream. Try it, you won't be sorry!

Best Bread Machine Bread

This was very good! I did not disolve yeast like it said, as I set the timer on my machine. I added liquids, sugar, flour, salt and lastly yeast. Came home to perfect loaf of bread! The second time I made this I stayed at home, so I did desolve the yeast like it said, used canola oil and 1.5 teaspoons of salt and the loaf was better than the first. Great recipe!!!

Chocolate Covered Cherry Cookies II

These are very good and I am not ususally a fan of chocolate and cherries. Mine did look and taste very good. I got about 20 cookies and I did only make half the "frosting". I used 6 T butter, 2 T margarine. I used 3/4 white sugar and 1/4 brown sugar, one egg and almond extract. I did poor some of the cherry juice into the cookie dough probably 2-3 T. I did not pat dry the cherries and I placed a small amount of the frosting into the indention before I dropped the cherries into place, then baked them for at least 12 min.( I used a scoop they were a bit larger). When they were almost cool I drizzled the remaing frosting on the top. YUM!

Real Italian Calzones

These were very good, I used sausage, quite a bit more than a half cup and I would suggest browning the mushrooms first to let some of the moisture out. I shaped into 4 calzones and I did sprinkle the top with garlic powder after brushing with egg. I also added onion to my filling. Great flavor! I forgot to mention I used the dough cycle of my bread machine for the dough and just added according to specs on machine.

The Best Rolled Sugar Cookies

Not as good as I was hoping for, I will keep looking. Not much taste in these. I do think that I rolled the dough a bit too thin, but that really shouldn't have affected the taste only the texture.**REVISED** I decided to try rolling in powdered sugar instead of flour and it make a huge difference. I also rolled this batch thicker and cooked for only about 8 min. The second time was much BETTER, will use this again!

These were okay. A lot of work for a so so taste. I tried the first 1/4 of dough in the traditional crescent shape but too much of the filling spilled out so I then did pinwheels for the rest it worked much better.

Jalapeno Pepper Appetizers

These are a hit at my house, I have also made them on the grill. I sprinkled some ranch dressing seasoning on the cream cheese before wrapping with bacon. I recently tried the oscar mayer pre-cooked bacon and it really worked great, I won't go back to the other bacon. These cooked up beautifully and so much less grease with the pre-cooked bacon. My family requested them a bit spicier so I left a few of the seeds in them and that seemed to work.

Coconut Pie

WOW! This was very tastey and a snap to throw together. I don't even like coconut and I loved this pie. I do like custard and the filling on this is like a custard with coconut. It really can't get any easier than this recipe and it baked up picture perfectly.

I don't eat avacodo, however my husband loves this and I will be making it over and over for him, followed directions exactly. I did have some left-over so I added some fruit fresh to it so it won't turn brown. I also left the pit in the container.

Pico de Gallo Chicken Quesadillas

This was GREAT! I make pico all the time, just a larger amount and in the winter I used canned petite diced tomatoes, while the taste is not as great as with summer tomatoes, it works. This was my first time making quesadillas and it was quite easy, so easy in fact I made bacon, egg and cheese quesadillas this morning for breakfast, I only wish I had remembered to put some of the pico in with the eggs!

Oatmeal Peanut Butter Cookies

Very good cookie! I used all butter and added a bit more flour and oats than the recipe called for (maybe a 1/4 cup of each, I just added till the dough looked stable enough) because others said that they spread out too much, mine were perfect. I always use parchment paper for baking cookies and I did leave them on the cookie sheets for a couple of minutes to set up or they will fall apart trying to take them off. I only used a half teaspoon of salt after reading other reviews and I did use chunky peanut butter because that is what was open.

This was very good, I am not an egg lover so for me I could eat the gravy part with the whites and leave off the yolks because that is the part I don't like! I have a friend who makes this meal for her family during lent. Followed recipe exactly.
