Blueberry Buckle

I made this and another very similar buckle that used Crisco. I read a few reviews debating which version was better. I made both on the 4th of July and let my family vote. It was almost unanimous. They liked both but the buttery one was the bigger hit. I actually thought as a cake it turned out lighter than the other version which kind of surprised me. I used all fresh picked berries which I think made it better! Thanks for the recipe and the family loved the 'competition'!

Zucchini Brownies

Everyone that has had these can't believe they have a veggie in there. They are great. As others recommended, I halved the oil with applesauce. and used half brown sugar, half white. Kids love them, hubby loved them, I, a huge chocolate fan, love them. Even my dad ate them up.

Oatmeal and Applesauce Pancakes

Very good! I doubled this and added 2 T of sugar, extra cinnamon and the nutmeg. I thought they were thick, meaning cook time was longer, but they were pretty light. Everyone loved them in my house--big pancake eaters. I also love the fact that I can get in oatmeal and applesauce.

Chuck's Favorite Mac and Cheese

With the amount of mac n' cheese my kids eat, I wanted to find something healthier. They thought it "looked funny" but ate it so well it was quiet at the dinner table. I skipped the butter for bread crumb topping and just sprinkled on bread crumbs. Excellent!

Zucchini Casserole II

This was amazing! I would have never thought to use zucchini in this way. Everyone loved it. I used shredded zucchini that I had frozen from last summer. I did drain/squeeze out all excess moisture!

Clone of a Cinnabon

Fantastic! In fact, I have to make them for company, because I'll eat them all. I did follow suggestion of flipping over pan so that all yummy stuff coats rolls rather than just sitting on bottom of the pan. Thought it was a great suggestion!

Mayonnaise Biscuits

Super EASY! Very good. I made adjustments since I don't have self-rising flour and sprinkled garlic powder on top to go with my soup. My husband (not a biscuit eater) said they were better than Red Lobster's--Yum!
