Carrot Oatmeal Muffins

After reading the reviews, I modified recipe. I used 1/2 cup of each sugar, and 3/4 cup applesause and 1/4 cup oil. I also whipped together the pineapple juice and cream cheese. The muffins are fantastic. Kids and hubby loved them.

Beef Nacho Casserole

After reading the reviews, thought I'd try this. Very tasty, and easy. I did make a couple changes. I used sour cream, about 1 1/2 tsp chili powder and a 15 oz can of corn. I also sauted onion, garlic and green pepper with beef. We thought it was very good. Kids ate it, too!

Mayonnaise Biscuits

Super EASY! Very good. I made adjustments since I don't have self-rising flour and sprinkled garlic powder on top to go with my soup. My husband (not a biscuit eater) said they were better than Red Lobster's--Yum!

Easy Oatmeal Muffins

I really liked the healthy factor here. After reading the reviews I added 1 tsp vanilla and about 1 tsp cinammon. Kids loved them!

Clone of a Cinnabon

Fantastic! In fact, I have to make them for company, because I'll eat them all. I did follow suggestion of flipping over pan so that all yummy stuff coats rolls rather than just sitting on bottom of the pan. Thought it was a great suggestion!

Zucchini Casserole II

This was amazing! I would have never thought to use zucchini in this way. Everyone loved it. I used shredded zucchini that I had frozen from last summer. I did drain/squeeze out all excess moisture!

Rice Casserole

I think this was a good starter recipe. I made this on the stovetop. Mixed one can cream of mushroom, one can cream of chicken with about 1 1/2 cups rice. Let it simmer together, mixing occasionally. It probably took 20 minutes. My microwave is old and this would have taken forever to do. Good change up from plain old rice-my hubby and I loved it, kids did not eat much of it.

Chuck's Favorite Mac and Cheese

With the amount of mac n' cheese my kids eat, I wanted to find something healthier. They thought it "looked funny" but ate it so well it was quiet at the dinner table. I skipped the butter for bread crumb topping and just sprinkled on bread crumbs. Excellent!

Traditional Salisbury Steak

Very good. My family loved it--will have to make more next time. I did make some modifications--I doubled gravy ingredients. I used 1 lb of beef for 4 patties, so I added more than recipe required for bread crumbs. I didn't have granuale boullion so I used cubes. Very easy. The only other recipe I use for this requires canned/jarred gravy, so I like the fresh ingredients with way less salt.
