Slow Cooker Chicken and Dumplings

I used 2 chicken breasts, 3 TBS butter, 1 can of soup and 1/2 of water. Although my husband went back to seconds this wasn't great and won't be in our rotation.

Salsa Chicken Rice Casserole

Nice, simple crowd pleaser. It's got a bit more flavor then your traditional casserole. I skipped the onion and used slightly spice roasted corn & bean salsa from TJs.

User error, I seriously over salted this and it was uneatable. I know you should always error on the side of less salt, but I'm going to be extra cautious next time I try this.

Perfect Pumpkin Pie

I took the advice of a fellow reviewer and warmed the pumpkin with the spices first. The pie was pretty, but average. Certainly there was nothing wrong with the pie, but it was just ok.

Banoffee

My husband is from the UK and grew up on banoffee pie. His feedback was that the crust made it too sweet and he preferred a standard crust. Also, he believes that instant coffee should be mixed into the cream, although I thought that cocoa sprinkled on top got the job done. As a final comment, this is better with a thicker sliced banana to help balance the flavors.

Pecan Pie V

Yummy, easy pecan pie. This came out perfectly and was a big hit with no changes made. I did use a Mrs. Smith deep dish pie crust, which help the filling perfectly and made a beautiful pie.

Gourmet Sweet Potato Classic

I have to confess that I skipped the nut topping and still went with marshmallows. This was awesome and got people who don't like sweet potatoes to eat sweet potatoes. This is a winner with no needed changes.

Slow Cooker Pulled Pork

This was good, flavorful and super easy. We have a very large slow cooker, so the root beer didn't cover the pork. The uncovered portion was a little drier and harder to shred, so next time I will turn the meat half way through.

Buttermilk Pancakes II

Baked Ziti I

This is an easy take-to-others meal. I usually spice up the sauce mixture a bit, then do the first layer as sauce/noodle combo. For the top layer, I pre-mix the remaining sauce & noodles with the mozzarella cheese.

Delicious Raspberry Oatmeal Cookie Bars

I doubled the recipe, but found it too sweet with the full amount of jelly called for. If I make this again, I will noticeably reduce the quantity of jell so that it's not so sweet. I drizzled chocolate over half the pan and found that that way too sweet.

Restaurant-Style Hashbrown Casserole

I used 8 oz of sour cream and reduced the butter to 2 TBS and then added green onion and crushed corn flakes to the top. Overall it was pretty good, although next time I think I may use slightly less sour cream, as the flavor was very evident.

Mom's Zucchini Bread

Per a previous suggestion, I used 1/2 cup oil and 1/2 cup of unsweetened apple sauce ad then reduced the sugar to 2 cups (50/50 mix of white & brown). I also used 4 cups of zucchini. I couldn't find the cinnamon, so I used pumpkin pie spice. The loaves needed just about 60 min to cook, but this is the first time my 14 month old has voluntarily eaten anything with vegetables in it, and even my husband liked it. This is a keeper!

D's Famous Salsa

This is great salsa! I followed other recommendations and partially drained the tomatoes and added 1 tsp of chili powder. Immediately after it was made it tasted great, so I can only imagine how good it's going to be after the flavors set. As a personal preference, next time I'm going to use a bit more onion, but otherwise this was hands down better then the Trader Joe's salsa that I had earlier today.

Baked Pork Chops I

I didn't follow the recipe exactly, and there are a few changes I'd make before making this again. First I'd only use cream of chicken and I think I'd skip the wine to reduce the amount of liquid as the gravy was a bit runny.

Southern Apricot Chicken

Even using no sugar apricot preserve and fat free sour cream, this was a bit too sweet for our liking. It was very easy to make, but I doubt it will make the regular rotation.
