I made this recipe a few years ago and it came out great, except these are a little messy as far as muffins go.
I had 4 bananas starting to brown, so I whipped out this recipe again two nights ago. I don't have a muffin pan anymore, so I used a small glass dish, about 8in by 5in. What an excellent surprise! It came out like a cross between banana bread and coffee cake, and had the perfect amount of moisture left in after baking for 20min. I didn't have brown sugar either- regular white works just fine for the topping. And personally I think the butter worked great in this recipe! Also don't be afraid to throw in one more banana... 4 is the perfect number.
