I accidentally bought a cucumber instead of a zucchini. I still made the recipe. It was awesome. I think that is a testament to how good this recipe is, haha!

Summer Berry Parfait with Yogurt and Granola

This is SO delicious--and that is coming from someone who is nothing near a fruit lover! I don't even bother to layer it, I just mix it all together and am good to go. It is so easy to specify to your tastes, as well. I prefer more granola and a little less strawberries. This is going to become a breakfast staple for me!

Asparagus Appetizers

I thought that I liked asparagus when I made this recipe--but I was wrong--I only like boiled asparagus, apparently! Fresh cooked asparagus has a distinctly different taste and it wasn't too great for my palette. I also used buttermilk bread and would not recommend that as it did not blend very nicely with all of the other flavors involved. Also, I find asparagus is hard to bite off pieces from, so eating it kind of turned into a difficult mess... which could probably be easily solved by cutting them into 4ths instead of in half. ALSO I would NOT recommend freezing them to harden everything up unless you really are going to be cooking them much later on. If you are going to cook some of them same day it may be better to refrigerate instead of freeze because after taking them out of the freezer I had to let them thaw for nearly 30 minutes anyway so I could 1) cut them and 2) get the toothpicks out. Nonetheless, my husband happily ate them, so they are not a lost cause!

Roasted Spicy Garbanzo Beans

These can be tooled with and made so many different ways-- different tastes, crispiness, etc. I like them to still be a little moist, and they taste like roasted & spiced potatoes to me!

Grandmother's Carrot Casserole

My husband liked this so much I actually made it twice in one week! For the mayonnaise, I used the do it yourself recipe from the "salmon deviled eggs and homemade mayonnaise" recipe on this site. I think that worked extremely well with the sweeter taste of this casserole dish. But I did only use about 1/4 cup of sugar, as suggested by other commenters. Also, it is really great right out of the fridge the next day--even better than when it is first done!

Banana Crumb Muffins

I made this recipe a few years ago and it came out great, except these are a little messy as far as muffins go. I had 4 bananas starting to brown, so I whipped out this recipe again two nights ago. I don't have a muffin pan anymore, so I used a small glass dish, about 8in by 5in. What an excellent surprise! It came out like a cross between banana bread and coffee cake, and had the perfect amount of moisture left in after baking for 20min. I didn't have brown sugar either- regular white works just fine for the topping. And personally I think the butter worked great in this recipe! Also don't be afraid to throw in one more banana... 4 is the perfect number.

Excellent, excellent. I did use a tiny bit less fresh minced rosemary than it called for. I also used a little bit more garlic, chives instead of onions, and added a few squeezes of lemon into it when adding the water and stock.

They turned out perfectly ONLY when I made them as small as the recipe called for and did the little fork design thing. So do that, and you have a 5 star cookie on your hands!
