Zucchini Granola Cookies

Well, I tweaked the recipe due to the availabilty of ingredients in my pantry: used Kashi GoLean Crunch instead of granola, omitted the orange peel, used white chips instead of semi-sweet. I had to bake them longer which is par for the course with my oven. I also added cinnamon to the dry ingredients. The recipe does not direct to use two different bowls for the wet and dry ingredients; I think that would have made combining and mixing much easier. Overall, I am happy with the cookies; the consistency is nice and they are not too sweet. I would make them again I had a giant zucchini to use up (this is not a regular occurance for me!) :)

Baked Potato Dip II

This is good! I tried to reduce fat and calories by using light sour cream, light cream cheese and 2% sharp cheddar; I didn't feel like the flavor of the dip was compromised. I used the entire container of sour cream instead of the 8oz called for in the recipe. The flavor of bacon was good, but not over-powering, using real bacon pieces (found by the salad dressing at the grocery store). I served Ritz reduced fat crackers along with veggies (red pepper, carrots and celery). A super easy recipe AND good?!? It's a keeper in my book :)PS- Even better after it sits overnight!

Oatmeal MM Cookies

I doubled the recipe as suggested by another reviewer- the dough was way too dry and wouldn't stick together. So I added some peanut butter to get it to stick together. Mmm-mmm. I didn't have almond extract, so I doubled the vanilla. I had to bake them longer, about 15 minutes. They turned out good, not great, but I would make them again.

Red Potato Bites

These were a nice change from the usual potato dishes I make. I boiled the potatoes for about 15-18 minutes, scooped out the middle with a spoon (I had to remind myself to be gentle so that the potatoes stayed in tact). I seasoned my mixture with garlic powder, onion powder and a small amount of salt. I omitted the chives bc I didn't have any. I will definitely make these again!

Buffalo Chicken Wraps

Mmmm, these are good... I used buffalo wing sauce and wheat tortillas. After I cut up the chicken, I added about 1/4 cup of bleu cheese crumbles (they melted nicely and spread the flavor throughout). I didn't add the celery (bc we didn't have any), but added lettuce and tomatoes. We dipped them in ranch to cool down the heat of the buffalo sauce. We really liked these and they were super quick :)

Spinach Stuffed Chicken Breast

Great recipe! We marinated the chicken in buttermilk as suggested. Added mushrooms to the spinach mixture. Used turkey bacon to cut fat. Served with red pepper risotto. YUM!

Chicken Wing Dip

Made a giant batch of this for Super Bowl yesterday... I added more buffalo wing sauce than stated, also added blue cheese crumbles. Served with torilla chips, although I love dipping Wheat Thins in it! Great recipe :)

Beefy Tomato Pasta Soup

Eh, I thought this soup was ok... I added more seasonings bc it seemed pretty bland to me. I sauteed the green pepper, onion and a red pepper I added with the meat. It needed more liquid- was not very soup-like. It was really easy- that's always a plus in my book!

Southwestern Black Bean Stew

I always feel misleading when I review a recipe that I changed. That being said I did like this as a base recipe and made some changes per my preference. I used ground turkey instead of beef and sauteed an onion and green pepper with the turkey. I used petite diced tomatoes instead of tomato paste and only needed to add about 1/2 cup water. I drained and rinsed the black beans before adding. I also added more spices- garlic, chili powder, onion powder, red pepper, cumin. I made a much bigger batch than the recipe suggests (added 3 cans of BB) and it was wonderful reheated for lunch. I love what I created and appreciate the direction this recipe gave me :)

Spinach Roll-Ups

These were good- with some changes! I omitted the mayo, bacon bits and onions. Added cream cheese, waterchesnuts, garlic, sun-dried tomatoes and turkey. Very good :)

Pumpkin Spice Cookie

Great idea- I added pumkin pie spice (about 1/2 tsp) and white chocolate chips; I think they would be too bland without some kind of addition. I love the way the house smelled while these were baking!

Broccoli Slaw

Really easy way to jazz up broccoli slaw... I used sunflower seeds with the cranberries; it was easy and tasted great! I also found that I didn't need the entire bottle of dressing- I think that would have been way too heavy. This is a easy summer recipe :)

Pumpkin Delight

Eh, this is ok... I have to admit I didn't follow the recipe exactly, but added my own variations; still didn't do much for me. I added about 6 oz lower fat cream cheese, used 2 boxes of instant sugar-free pudding (1 box vanilla and 1 box cheesecake), increased the milk to 2 cups, added a splash of vanilla (hoping to cut the artificial flavor), doubled the PP spice and only used the whipped topping as a garnish when serving. I gave it 3 stars bc I think the recipe is probably a great alternative for those with diabetes and the idea is good, but it was just not quite what I was hoping for :(

Spinach Chicken Enchiladas

This was a good basic recipe, but needed some doctoring to make it a great recipe. Added black beans, green chiles and 4 oz lower fat cream cheese in the filling, used wheat tortillas, added other spices (cayenne pepper, dash of cumin, white pepper, red pepper flakes) and omitted the nutmeg, used 2% milk Mexican blend for cheese. Mmmm, I think we found a keeper!

Spicy Black Bean Cakes

Mmmmmm, these are good! The only change I made was after I shredded the sweet potato, I cooked it in a skillet for just a few minutes to soften. Also used green chiles instead of jalapeno bc that's what I had on hand and less than 1/2 cup of bread crumbs to save some calories. Reheated well the next day, which is a bonus to me! Good recipe, will make again!

Beefy Lentil Vegetable Soup

This is a good basic recipe, although I found I had to add a lot to make it a *great* recipe. I used chicken stock, one small can of tomato sauce and one can of petite diced tomatoes (that's all I had and I wasn't going to the store!) instead of boullion cubes and V8. I added lots of spices: garlic, onion powder, red pepper flakes, two bay leaves as it simmered and omitted the salt. Also added way more than one dash of Worcestershire sauce. Overall it tasted great, but really needed the extra spice. Will make again!!

Easy No Bake Cookies

These are ok... This is an easy recipe, but was more bland than I would have liked. I used butterscotch regular pudding and about half of a pkg of sugar-free white chocolate and 4 cups of oats. I boiled the mixture for 3-4 minutes and my cookies set up well. Maybe using peanut butter instead of butter would add some character to these cookies. I do love the ease and versitility of this recipe.

Cream Cheese Mints

These are a bit time-consuming (bc each mint has to be formed individually), but easy and cute :) I used 4 oz cream cheese and 4 cups of powdered sugar. Half of a tsp of peppermint extract worked out well for me! I rolled into balls and then flattened with a spoon. Cute addition to my cookie tray!

Almond Crescents

I thought these were kind of bland... I had even added almond extract and still didn't taste much. Maybe it is because I left the dough in the refrigerator for a few hours, which was too long??? Also, I made them much bigger than suggested (only yielding 30 cookies), maybe that affected the taste? I couldn't figure out an easy way to coat them in the powdered sugar. I like the idea of almond crescents; guess I just need to find a different recipe.

Brownie Crackles

Really easy recipe... But I had a hard time telling when these cookies were done, thus one batch was under-cooked and one over-cooked. I added white choc chips bc that's what I had. May try again, kinda disappointing...
