Home Style Macaroni and Cheese

I tweaked the recipe a bit for our liking, but overall we enjoyed it, especially reheated the next day! I used cheddar jack shredded cheese, I think I would use sharp cheddar if I made it again (the cheese flavor was a little weak). I also added about a cup of feta cheese. I used more pasta than called for- probably 10-12 ounces. I also warmed up some turkey sausage links and added those to make it a full main dish (my husband doesn't consider it a meal unless it has meat!). I didn't add the breadcrumbs and bake in the oven bc it was a hot summer day and I didn't want to turn the oven on- I'm sure baking it would only make it yummier! Not sure how often I'll be making mac and cheese, but this will be my go-to recipe when I do :)

JIF® Peanut Butter Bread

I guess I had too high of hopes for this bread. It was alright, but not great. I was expecting a sweet bread, it is more of a savory bread. Although I made it sweet by spreading some Nutella on it- yum! I added more PB than called for, probably more like 1 1/4 cups. It baked for just over an hour. My husband really liked it, but he doesn't have much of a sweet tooth, unlike me :)

Chicken Breasts with Balsamic Vinegar and Garlic

We liked this, but it wasn't as phenomenal I was hoping it would be. I didn't dredge the chicken in flour and used portabello mushrooms. I served it over whole wheat couscous. It was easy and good :)

Pasta e Fagioli a la Chez Ivano

MmmMmm, this was great! I chose this particular Pasta e Fagioli recipe because I liked that it had meat, my carnivor husband won't eat a main dish without it. And this fit the bill! I made a few minor changes- I scaled down the recipe for my husband and I; only used 1 lb of ground beef and reduced the veggies as well. I used elbow macaroni because that's what I had on hand. I used Italian seasoning instead of the individual spices listed and it worked well. I'm looking forward to having it again for lunch tomorrow :)

Chocolate Zucchini Cookies

Just made a batch of these: YUM-O! What a great way to use up some zucchini! Only a few minor changes I made: added more cocoa powder, about a cup of milk chocolate chips, a cup of white chocolate chips and probably more like 2 cups of zucchini. I got 30 good sized cookies out of this recipe, they needed to bake longer than 10 minutes (more like 15 for me). I will save this recipe and definitely make again :)

Pork Chops with Sour Cream and Mushroom Sauce

We thought this was good, but like many others, I made a few changes... I seasoned my chops with salt, pepper and garlic powder before browning for about 4 min on each side. I removed them from the pan and added maybe 1.5 cups of mushrooms with some olive oil cooking spray, minced onions and garlic powder. I cooked those for a bit, then added the fat free sour cream and healthy choice cream of mushroon soup, then put the chops back in the pan to let them simmer for 30 or so minutes. The fat free ingredients weren't even detected by my picky husband; the gravy tasted really good. I served along with brown rice (that I added some of the gravy to- yum!) and sauteed zucchini. Great healthy dinner, will make again!

Oatmeal Pudding Cookies

Well, my biggest mistake is that I only had sugar-free pudding, so that's what I used and they're still pretty good... The pudding mix was white chocolate (not sure if that really made a difference). I reduced the oats to 2 1/2 cups and added vanilla like previous reviewers suggested. I also added about 3/4 cup of both milk chocolate and white chocolate baking chips. Not the best cookies I've ever made, but they'll do ;)

Smooth and Creamy Peanut Butter Pie

Omg, this pie is divine! I eyeballed the peanut butter and probably added more than 3/4 cup. I also decreased the confectioners' sugar to 3/4 cup, I think more than that would make it way sweeter than it needs to be. I followed others recommendations to use the entire 8oz block of cream cheese and an 8oz container of Cool Whip. I also mixed in maybe a cup of milk chocolate chips. MmmmmMmmmm, this recipe is a keeper!

Aegean Chicken Salad

Ok, so this recipe was a great start for me, but I made some changes according to my tastes... And it turned out soooo good! I used chicken breast that I had cooked in chicken stock, balsamic vinegar and juice from a jar of pepperoncinis. For veggies, I used chopped black olives, water chestnuts, red onion, finely chopped canned artichokes and pepperoncinis. As the "mayo", I used roasted garlic hummus, plain Greek yogurt and sour cream. Finally, for spices I used garlic powder, Greek seasoning and a dash of salt/pepper. And don't forget the feta! Let it sit for a few hours or overnight, the favors get even bolder. I served it stuffed in pita bread with a garden salad. I was so happy to find a chicken salad recipe without mayo- this is a keeper!!

Chocolate Chip Pie III

I thought this was good, but I made a few minor changes. I reduced the sugar to just over 3/4 cup, added a couple more tablespoons of flour and added a dash of vanilla. Also, i used milk chocolate chips instead of semi-sweet bc that's what I had on hand. It was super easy, which I loved. Definitely serve it with ice cream, even with the reduced sugar it would have been too sweet alone.

Southwestern Quinoa Salad

I loved this- with some changes....I added a dash of balsamic vinegar and garlic powder to the quinoa as it cooked. I used a red pepper, orange pepper, red onion as my veggies. I used balsamic vinegar instead of red wine vinegar and omitted the olive oil. I combined all of the ingredients (except feta cheese) with the balsamic vinegar/lime juice and let it sit overnight. Just before I served the salad I added the feta cheese and two ripe avocados (I chose to leave out the cilantro). Added the juice of one more lime, another dash of balsamic and it was good to go. It was excellent! I think letting the salad sit for awhile (overnight) is important for the flavor. I will definitely make it again!

Salsa Chicken Rice Casserole

I really liked this- but I changed to recipe to suit my family, so I felt like I couldn't give it 5 stars. I used brown rice instead of white, cooked the chicken in stock, and only used about half of the cheese called for (substituting queso fresco and mexican for monterey jack and chedder). Next time I will add black beans and corn. It's a keeper!

Coconut Macaroons III

My first experience with making macaroons and it was a success! I had to bake them longer for the coconut to toast. I also learned that if I moisten my hands with water, they are *much* easier to shape into balls (without all of the batter sticking to my fingers)! I made nine BIG macaroons, I am sure that's why the bake time needed to be longer, too. I dipped about half into melted chocolate- those are my favorite! My husband prefers the plain. Either way, they are great and this recipe is a keeper :)

PHILADELPHIA Tuscan Dip

I had to double the recipe bc I was taking it to a fairly large party. It was a hit! I made a few changes, though... Substituted green for red onions, omitted black olives, added feta cheese, garlic and onion powder. I will definitely make this again!

Chocolate Mint Dessert Brownies

I really shouldn't review this at all bc I changed the recipe so much... I cheated by using a box mix. I wanted a thicker layer of mint, so I used 1 1/2 the amount called for originally. I also used mint extract instead of Creme de Menthe. I think I should have mixed my mint layer longer, it was sort of grainy to me. I sprinked Andes Peppermint Crunch baking pieces over the top of the frosting to make them look festive. They were cute, just not super sure I liked the taste. That being said, I would attempt them again bc they looked so cute on my cookie tray :)

Mexican Bean and Rice Salad

Love it... with minimal changes. I used 2 cans of Black beans instead of kidney. Used green onions, green chilies (instead of jalapeno). Added chili powder, onion powder. Used 2 limes, dash of balsamic vinegar and EVOO for the dressing. Definitely let it sit overnight. My co-workers loved it :)

Noodles

Eh, I wasn't impressed with this, even with some changes to jazz it up... I used one can of crm of mush, one can crm of chick and one can chedder cheese soup (I had read that it was dry, so I wanted mine to be moist enough). Added mushrooms and french style green beans. Used onion and garlic powder. My husband thought it was good (he added hot sauce and sour cream, though). I will eat the leftovers for lunch, maybe after some time together the flavor will be more bold. But I don't think I'll make this again.

Fresh Cherry Cobbler

This recipe is not fool-proof, I guess. I am not sure what I did wrong, but the bottom was very hard. It was like all the sugar sunk to the bottom and then carmalized after baking. It still tasted good, just was difficult to eat without using a knife. I added vanilla extract and a little cinnamon for flavoring and used about 1/4 cup less sugar overall. I think if I made this again I would first put the cherries in the baking dish, then the cobbler part on top of them. Maybe that would help the hardness on the bottom???

Zucchini Patties

These were good- but the recipe needed tweaking, namely the addition of spices (garlic, onion powder, red pepper, ground mustard). Used mashed potato flakes as suggested by other reviewers- I think this made a big difference in the consistency of the patties. We dipped the patties in sour cream. Not a super healthy side dish, but a good way to use a large amount of zucchini- I would make them again.
