Barbequed Pork Ribs

Made these again for a 2nd time tonight... this time with large pork spare ribs. As before, these were so tender and tasty! Use half the sauce for basting and save half for dipping!

Bird Seed Energy Bars

Very yummy & filling. I think next time will take suggestion & use 1/2 cup oil + 1/2 cup applesauce. I also only had 3/4 cup honey, and was plenty sweet & moist. I modified to my taste with 1/2 cup each - flax seed, sunflower seeds, shredded coconut, cranberries & golden raisins. Great base to start & adjust to what you like best in an energy bar!

Halibut with Zesty Peach Salsa

Only made the salsa... and served with grilled salmon. It was an wonderful way to use up the 2 nectarines in my fridge that weren't quite ripe enough to eat alone, but getting too bruised to keep much longer. YUM!

Sun-Dried Tomato Hummus

Very tasty! I "lightened" it for a positive outcome, using 1 Tbsp sesame oil instead of tahini, rinsed the sun-dried tomatoes & used only 1/4 cup olive oil. Reserve the liquid from the garbanzo beans, and add in a bit at a time to get the right consistency & blend!

Spicy Southwestern Slaw

This was a great way to use my extra cabbage. 3 cups was just less than 1/2 head. I used only HALF of the called for oil (1/4 cup only), and substituted with olive oil (to keep on track with my WeightWatchers plan). Also only used 1/2 of the jalapeno for a nice bite! Thanks for the recipe!!

Juicy Roasted Chicken

Excellent! I added lemon pepper & Lawry's Seasoning salt to the skin; only used butter inside (not around in roasting pan); and basted it with dripping occasionally last 15 minutes. It did require longer to cook in my oven though - about 1 hr 45 minutes, but could tell it was done when the juices ran clear. Easy and very moist!! A keeper!

Chicken and Spinach Alfredo Lasagna

A big hit with all my friends! I "lightened" it using a can of fat-free evaporated milk + fat-free half & half in place of heavy cream; fat-free cream of chicken soup concentrate & part-skim ricotta cheese. Still plenty rich!

Sugared Black Raspberry Tea Cookies

Excellent, but I found it only made 20 cookies & had to make a second batch. I did 1/2 without chocolate chips. Think I prefer those better. And used Simply Fruit Red Raspberry Jam with great results. A keeper recipe for sure!

Pseudo Sourdough for the Bread Machine

Excellent bread... but I agree with other reviewers and won't call it "Sourdough" in my files. Next time I will add a little more salt though. Made it with fat-free sour cream and it was plenty moist & yummy on the inside with a nice crispy crust. A keeper!

High Temperature Eye-of-Round Roast

I was unimpressed. The roast cooked GREAT with this method (have cooked standing rib roasts in similar fashion), but honestly I didn't like the taste/quality of the cut of meat. Think I'll just stick to my old standby of grilled "London Broil" for sandwiches.

Easy OREO Truffles

A WONDERFUL recipe!! Someone elsewhere suggested using 1/2 lb melted white chocolate to drizzle over the top for the "oreo" effect. A big hit this Christmas with my family and friends!! Definitely a keeper!

Penne with Chicken and Pesto

A nice change to the typical Pesto Pasta. I used fat-free half & half instead of heavy cream and it turned out well. I just simmered a bit longer to reduce the sauce.

Very tasty! I took everyone's advice and used 1 1/2 cups shredded cheese & 1 cup milk. It was a little sweet... next time I will cut back the sugar a little.
