Raspberry and Almond Shortbread Thumbprints

Reviewed: Dec. 19, 2012
Yummy. Very easy recipe. Some of my taste tests it was hard to taste the preserves but it was still good. Did not add icing and it totally doesn't need it. Baked at about 335 instead of 350 for about 14 minutes.

Peachy Enchiladas

Reviewed: Aug. 8, 2012
Didn't like it at all. Well the sauce was good to me. I loved the maraschino cherry flavor as the other reviewer mentioned. So that got the 2nd star.

Johnny Appleseed Meatballs

Reviewed: Apr. 16, 2012
We loved the gravy but felt the meatballs were lacking a stronger flavor although they were still pretty good. Next time I will add more egg. I did add 1 tsp of all spice and around 1 tsp of cinnamon maybe more, did add rosemary but didn't have much. The gravy we used a brown gravy mix that MUST be doubled. Didn't have any brown sugar so I eyeballed some honey, cinnamon and a bit of dashida(korean beef stock stuff). Served with Penne and stuffing - to hubbys request. Needs to be served with pasta and some veggie with good texture(not soft). Maybe a salad or something. Will definitely make again.

Apple Stuffed Chicken Breast

Reviewed: Mar. 23, 2012
Spices are definitely necessary and I preferred to bake it which took about 40 minutes. Not sure if we'll make this again would probably change the stuffing some how though it gave it good flavor it was missing texture. A reviewer suggested walnuts but no nuts for us.

Easy Granola Bars

Love the variety you can make with this. Very easy to change. 3 cups of oats to 3-4 cups of w/e you want to add. Remember to press in the pan with parchment paper strongly!

Easy Sausage Cheese Balls

Reviewed: Mar. 11, 2012
Yums. Lot less baking mix though. I only used about 1 1/2 - 2 cups of baking mix. But i could see using less cheese as well. 4 cups is an awful lot.

Lemon Pound Cake

Reviewed: Feb. 1, 2012
Made with an 1/8th cup substituted with lemon juice not milk and it was pretty good. Depending on my lemon craving I may want to increase to 1/4th. Not as heavy as i wanted but thats okay.

Broccoli with Garlic Butter and Cashews

Reviewed: Nov. 24, 2011
We did not like those flavors on the broccoli at all. If we are looking for a salty/sour flavor we will make stir fried broccoli.

Sopapilla Cheesecake Pie

Reviewed: Jun. 1, 2011
Wow! Delicious! Must try it right away if you are even considering it. So little prep time. So cheap to make. I hate cheesecake but this was just perfect. I still hate cheesecake but I'll make this any time. Made as is, I had issues with the crescent rolls overlapping but next time I'll cut in them in half and then layer much easier.

Spinach and Tortellini Salad

Reviewed: May 15, 2011
This is excellent! Made as stated but had to pull spinach out so I think next time I will only used fresh spinach. Did not care for the olives so definitely wont add those again. But this was my first time to ever have tortellini and since I had cooked spaghetti sauce the night before I tried it with it first and wasn't impressed. The italian dressing was perfect with it!! Will definitely experiment with it in the future!

Addictive Sweet Potato Burritos

Reviewed: May 15, 2011
We do not eat beans so we edited it quite a bit. Start by cooking rice, letting it cool. Saute the onions and garlic then add the rice to make it like fried rice. Cook 1 can of corn, drain completely and place in large bowl. Add the chili powder, cumin, soy sauce, mustard and used a good amount of cayenne pepper. Mix completely. After the rice mixture is cooked, let it cool a bit and add to the corn. Then I boiled some chicken while the sweet potatoes are boiling in another pot. I always make my sweet potatoes with a few tablespoons of butter and some maple syrup. When the chicken is done it's shredded up then mixed in the rice mixture. Put the sweet potatoes on the tortilla first then the rice mixture, top it with cheese if you really want but i've had people love it with out.

Garden Pasta Salad

Reviewed: May 8, 2011
It was pretty good, but i think the dressing i used wasn't quite perfect. Next time I'll use the dry mix like others have. I omitted celery and didn't use nearly as much dressing. A little rice vinegar was a small addition for the veggies to soak in before adding them to the pasta.

Witches' Broomsticks

Reviewed: Oct. 30, 2010
Pretty yummy but needs a few things. Personally I like more butter bread for breadsticks, so I used quite a bit more than called for... eeww. But I added garlic powder (would have perferred garlic salt) to the butter and it was yummy. No cheese added though. I had a very difficult time getting ANY of the broomsticks off the pan with out the stick or the bristles separating. But if you want simple - almost from scratch (no idea how baking mix and flour are different) breadsticks these work!
