Congealed Chicken Salad

I was personally shocked by how good this was! I've never tried anything like it and wouldn't have this time if I didn't need a salad for my cooking club meeting tomorrow morning. If it's half as good firm as it is straight out of the bowl, it's sure to be a hit. My husband, who hates chicken salad, is licking the bowl as I type! I followed the recipe with a couple changes: I used low fat cream cheese and 98% fat free cream of mushroom soup. I also used pickle relish instead of chopped sweet pickle.

Best Big, Fat, Chewy Chocolate Chip Cookie

Just one more big 5-star rating for this wonderful cookie. I didn't have any butter on hand, so I substituted butter-flavored shortening, and I only had 1 cup of mini chocolate chips on hand. Otherwise I followed the recipe exactly. The dough was not runny. I did not chill it. My eggs were straight from the fridge. I used one shiny metal pan and one dark non-stick pan. They all came out the same. I don't know why some recipes turn out and some don't. But this brought thick, crinkly-topped, chewy chocolate chip cookies I will definitely be making again!

Quick and Easy Crab Rangoon Dip

Baked Pork Chops I

The smell of these cooking in the oven nearly drove me nutty, but it was worth the wait! Just like I read in other reviews, they practically fell off the bone, and were a big hit with my husband!

Fried Cornmeal Mush

I love love love cornmeal mush and am thrilled to finally have a written recipe! For a twist, add cooked crumbled sausage (we prefer spicy sausage). We've always sliced ours very thin, salted lightly and baked until golden (about 10 min., but watch closely) in a 400 degree oven instead of frying.
