Coconut Curry Pumpkin Soup

Made this tonight and stayed fairly close to the original recipe. Did not have coriander, so I left it out and threw a bay leaf in to boil.I used an emulsion blender in the pot. My husband who is not a big fan of curry LOVED this and so did I. The amt of crushed red pepper was enough to add a little "heat" but not too much for us. YUMMMM, perfect Fall soup.

Grandad's Pancakes

I gave it 4 stars (vs. 5) because I changed the recipe a bit, based on others' reviews. I used 2 tbls of sugar plus one packet of Truvia. I added one tsp of vanilla extract and OF COURSE added chocolate chips :) These pancakes were light and good, nice and puffy. My milk and egg were not room temp either but all turned out good. I am sure I will use this recipe again.

Easy Pancakes

Too salty, so next time I will cut it in 1/2. Also, a I used a little sugar and 1 packet of Truvia and they came out just fine. I also added chocolate chips....why not? These pancakes were not light and fluffy but more dense but the hubby and child loved them. I cooked up a bunch and froze them in packs of two so I could just defrost in the micro quickly during the busy weekday mornings. I will make again, I'm sure. They were easy.

Quick and Easy Alfredo Sauce

We loved this! I did only use 3/4 stick of butter and light cream cheese to help with the calories. I added minced garlic instead of garlic powder and it was great. We served it with frozen broccoli pieces (thawed), chix, and over ravioli....YUM! So quick and easy to make.

Turkey a la King Deluxe

We liked this recipes alot. It was a bit runny though. Next time I think I'll only use 1/2 can of water. Also, I didn't have peas so I substituted green beans and it was good. No sherry either so I used Pinot Grigio in its place. Nevertheless, we really enjoyed it and it was easy to make. Served over wide egg noodles.

Pasta Lasagna

Very easy and tasted good. I had friends over for dinner (6 of us total) so I upped the pasta to 1 lb. and used sweet italian sausage (cut into round discs) instead of ground beef. I also used a 9"X13" pan to cook. We had plenty and everyone had seconds. I will make again.

Baked Haddock

My hubby and me liked this recipe. It was tasty and SO easy to throw together. I did add some minced garlic to the melted butter. I used 1/2 cup of seasoned bread crumbs and 1/4 cup plain Panko crumbs for extra a little extra crunch.

Barb's Pumpkin Chocolate Chip Muffins

I liked these muffins. I thought they were a bit "sticky" but yummy. I did use 1/2 whole wheat flour and regular white flour. I also added coconut flakes (when I stirred in the chocolate chips) and it was SO good.

Candied Carrots

Very simple and sweet. My husband and I both loved it. The only change I made was to melt the butter and brown sugar in the pan, while the carrots were draining. Then toss the carrots back in and stir around. That way the brown sugar completely melted and was not lumpy.

Aunt Carol's Spinach and Fish Bake

This recipe was easy and great. Only changes I made were 2 eggs to spinach and Panko bread crumbs mixed with regular ones. I did not add any cheese to the topping but instead put very little butter on top of bread crumb covering. LOVED IT! (Cooked it for 35 minutes @ 330 degrees.)

Hamburger Soup III

My husband and I really liked this soup. A few changes that I made were: add 1 pkg. of chopped frozen spinach and 1/2 pkg. of frozen green beans (both thawed), used a different shaped pasta (smaller), and added Worcestershire Sauce (few shakes). I used all diced tomatoes with Italian Seasoning in them. Real Good....and easy.

Easy Baked Tilapia

The fish was moist but lacking flavor. I did add a bit of Paprika, but will likely try another recipe next time. The good side though is that this recipe was super easy and quick, and not bad (just a bit boring).
