Meatloaf With a Twist

Great recipe! The whole family loved it. It really lends itself to experimentation. I used crushed Caesar croutons instead of bread crumbs and 1/2c Parmesan cheese instead of Romano in the meat mixture, and 4 oz of cream cheese and 1/4c of mayonnaise instead of ricotta cheese in the mashed potatoes. Highly recommend this recipes!

Ham, Potato and Broccoli Casserole

Delicious! Here are my adaptations: I layered four thinly sliced potatoes in the bottom of a 13x9 baking dish. I sprinkled garlic powder and chopped onion on top of them and baked for 35 minutes at 375. I mixed chopped smoked kielbasa (didn't have ham), defrosted broccoli, two cans of cream of mushroom soup, 1/2 can of milk, 1/4c mayonaise, 1 cup of shredded monterey/colby cheese, 1 4oz can of mushrooms together and poured over pre-baked potatoes and baked for another hour. There weren't any leftovers!!

Fast and Easy Pancakes

Love, love, love this recipe! It's definitely fast. I made it in 5 minutes on a morning before school. Didn't change a thing and they turned out perfectly.

Butter-Dipped Biscuit Squares

I was looking for a quick biscuit recipe for "biscuits and gravey" and this certainly fit the bill. I used the flour substitute and half the sugar and salt. Will definitely use again.

Maria's Stuffed Chicken Breasts

Great recipe! My family loved it -- even my husband who hates spinach! I used fresh whole spinach and cooked it in garlic, onion, and olive oil until tender, then added as directed in the recipe. I didn't change anything else. Great!

Four Cheese Macaroni

Loved this recipe! It was VERY easy and so delicious. I used 1 cup of mozzarella, 2 cups mild cheddar, and 1 cup colby/montery jack mixed. I also used 2 cups 1/2 and 1/2 and melted the 8ozs of velveta in the 1/2 and 1/2 before adding to the macaroni. All other directions were followed to the letter. Great! I will definitely make this again!

Potato Soup with a Kick

This soup is delicious! I doubled the recipe because we are a soup-eatin' family. I used one pound ground venison and one pound ground wild hog instead of beef. I also added two TBSP of minced garlic while browning the meat. I used two cans (14.5oz) of chicken broth, one can of beef broth, once can of diced tomatos and one 60z can of tomato paste. No water. I doubled all spices and it turned out fantastic. I took the time to mash a majority of the potatos to get a thicker consistency. We emptied the pot in ONE DAY! Will definitely make again!

Sweet Potato Casserole I

My whole family loved this recipe!! I was looking for something different when I realized I forgot to purchase marshmellows for my usual sweet potato casserole. For this recipe, I baked the sweet potatos the night before, left out the orange zest, and used walnuts instead of pecans. This will be served alongside our other traditional favorites from now on!
