Carrot Cupcakes with White Chocolate Cream Cheese Icing

Reviewed: Sep. 28, 2008
These were exactly like my grandma's carrot cake she used to make. I changed it up a bit...1/2 apple sauce for 1/2 the oil, whole wheat flour, brown sugar for white. Super moist and tasty.

Indian Chickpeas

Reviewed: Feb. 26, 2008
Flavour was better for leftovers as it had time to soak into the beans.

Shannon's Wicked Brownies

Reviewed: Nov. 1, 2009
The flavour and texture of the brownies was fantastic. Word of advice though...do not over beat. I did this and the tops formed a hard layer with basically a hole in the middle, then a nice soft brownie bottom. Really weird. Still tasted great! I used "best white icing" from this website to decorate as mummies for Halloween as suggested by another user. Received rave reviews.

Muesli Bars I

Reviewed: Feb. 26, 2008
Excellent recipe! I have to agree, they are addictive! I added dried cranberries to the recipe, which added some colour and great flavour. Other dried fruit would work well too. I would try to decrease the butter next time as I found them a bit greasy, but not sticky. I would also experiment with maybe more nuts and coconut as opposed to the sesame to change the flavour up a bit. Thanks for this one!

Brazilian Whole Banana Pie

Reviewed: Aug. 18, 2008
Although the ingredients are healthy, which we try to incorporate into our menu, this wasn't one of our favourites. The "crust" didn't stick together enough and the flavours didn't bake together, so it tasted like eating a banana with crumbly topping. My husband enjoyed it though and did say that it was better cold the next day.

Muesli Bars II

Reviewed: Mar. 1, 2008
These bars are tasty! I halved the recipe and it still worked out great. Next time I will try adding a little bit less honey as it was a bit overpowering to the peanut butter using the ratio in the recipe. I waited a bit before adding the chocolate chips, but as other reviewers, not long enough cause they still melted in. Still got the peanut butter / chocolate taste, but next time I'll try being a bit more patient.

5 stars plus! This is my new go to appetizer. So simple, yet looks fancy. Lots of rave reviews on this one.

Best Cream of Potato Soup

Reviewed: Nov. 3, 2009
Great soup. I used regular milk as I had this on hand and did not add the wine. I found it salty though, which I'm thinking was the chicken stock I used, so I would try a reduced salt type next time.

Yogurt Almond Ice Cream

Reviewed: Feb. 21, 2008
A great alternative to using milk products. It froze rock hard though, so I'll have to see what I can do to help that.

One-Bite Pecan Pies

Reviewed: Nov. 10, 2009
These are great and will be super cute on the Christmas dessert tray. I have frozen them in hopes that they make out just as well as butter tarts do frozen, don't see why not. I made them in little muffin/tart cups and they come right out of the paper. To drizzle the chocolate I used a Ziplock bag and cut a tiny hole in the bottom. Worked really well. I only used about 1/2 the chocolate though, so you can likely cut down on the melted chocolate if only drizzling.

German Sweet Chocolate Cake I

Reviewed: Nov. 4, 2009
Awesome cake! I couldn't find German chocolate, so I used regular semi-sweet chocolate and it turned out just fine. I would be cautious about serving 24 though. Maybe on a dessert buffet with little slivers this would work, but not if it is your main dessert.

Broccoli Casserole

Reviewed: Nov. 3, 2009
This got good reviews by my guests, but I would change a couple things next time around. I would use lots less mayo and add more cracker topping.

Rocky Road Caramel Apples

Reviewed: Nov. 1, 2009
These apples were fantastic!!! I followed the suggestion of others and placed the apples in boiling water for 30 seconds or so, then wiped off the wax, then put them in the fridge to cool. The caramel stayed on perfectly! The toppings were a bit heavy and slid though, so I would try to "mush" them into the caramel a bit more for next time rather than simply rolling to get the toppings to stick.

Flourless Chocolate Cake I

Unbelievable. Everyone devoured this at a dinner party. I topped with "chocolate ganache" from this website to be extra decadent. I served with whipped cream and rasberry sauce (as recommended by another user).

Bean and Bacon Soup

Reviewed: Mar. 1, 2008
I know this is not consistent with the other reviews, but I have to be honest. I fried the onions first and used beans in molasses. Not using the ranch style beans may have been where I went wrong, but all we could taste was spoonfuls of tomato sauce and beans with some bacon chunks. The soup was very acidic and the taste was not enjoyable.
