Brazilian Whole Banana Pie

Although the ingredients are healthy, which we try to incorporate into our menu, this wasn't one of our favourites. The "crust" didn't stick together enough and the flavours didn't bake together, so it tasted like eating a banana with crumbly topping. My husband enjoyed it though and did say that it was better cold the next day.

Roasted Beets with Feta

The roasting method worked perfectly. The flavour needed a bit more. Maybe marinating the beets, then reheating would work. I'll have to try this next time.

Pizza Without the Red Sauce

I used chopped sun-dried tomatoes instead of the pesto (to use them up), then added a bit more of the butter / olive oil / garlic mixture to get the spread consistency. I also added more Parmesan cheese (cause we like it). Also made it on a whole wheat crust. The grains from the crust mixed with the toppings were great!

Zucchini Cilantro Dip

I added more garlic for more flavour as it was a bit bland at first. Went over well, but I prefer the flavours of hummus or guacamole better.

Chocolate Zucchini Cake III

Incredibly moist. I substituted applesauce for the oil and whole wheat flour for the all-purpose to make it a bit healthier (still a pile of sugar though, would have liked to substitute for this too). Added "Texas Chocolate Frosting" (more sugar, but soooo yummy!).

Excellent simple icing. Takes more than 3 tbsp. milk to make it spreadable, but add slowly (I added too much and it was too runny the next day). I frosted the "chocolate zucchini cake III" with it, which was a deadly combination.

Springtime Spinach Salad

Oregon Salmon Patties

I made these for a relatively fast lunch yesterday and they were great! For a sauce, I mixed up some Miracle Whip with lemon juice, fresh dill, garlic powder, and mustard powder, which was a great addition.

Ginger Dipping Sauce

The sauce was good for our fondue, but I found it too runny and the soy sauce overpowered it. I think there are other thicker sauces out there that will still give the ginger flavour without the amount of soy.

Cheese Fondue

Very easy. The wine gave it a nice flavour. We used good cheese, which I would recommend, because there isn't anything other than the wine to really add to the flavour.
