Fresh Tomato Shrimp Pasta

This was good but needed a kick. If I make it again, I'd throw some red pepper flakes in and maybe use some tomato paste/sauce.

Eggplant Tomato Bake

Needs garlic or salt, or maybe garlic salt! Next time I would use mozz instead of ricotta/ parm. I think adding some mushrooms and Italian sausage could spice this up a little.

Slow Cooker Beef Stew IV

Great stew. I used other's suggestions with the Worcestershire sauce and more red wine. I added a teaspoon of minced garlic, a bay leaf, and celery. Perfect fall/winter staple.

Bird Seed Energy Bars

I used flaxseed, cranberries, chocolate chips, sunflower seeds, and sesame seeds. I thought about throwing in some almonds, but I thought it would be too dry. I'm currently letting them cool, but I snuck a bite and couldn't wait to give my report. They are fantastic! I might use other people's suggestions and use applesauce instead of all the oil, seeing as the main point of making granola is to stay healthy!!

Feta Eggs

I cook for only myself in the morning, so I make little adjustments. I use a tad of butter, add a small handful of fresh spinach leaves, and let them wilt. I scramble 2 eggs, add organic black pepper and sea salt, crumble in a few chunks of feta, and fold over until light and fluffy. I eat this every day!

Okra, Chicken and Rice Casserole

If I had to make this dish again, I would make the rice separately and pour the cream of mushroom/ chicken mixture over it. My rice never seemed to get soft when I baked it all together.

Hot and Sour Cabbage Soup

Fabulous!! Even though I burned my tongue during the taste-test, I could sense the hot vs. sour. I will definitely make again. I might experiment with different brands of szechwan sauce.

Slow Cooker Kielbasa and Beer

Super good recipe. I threw the kielbasa on the stove to brown it, tossed it in the slow cooker with the bag of kraut, squirted in a hefty dallop of dijon mustard, dropped in a can of beer, and thought about it all day at work. Next time I think I will cut up an apple to lessen the tart from the kraut. Will definitely keep in my recipe box!

Three Hundred Chocolate Chip Cookies

Not a good cookie recipe at all. The dough was so firm it barely let the chocolate chips stick. When they were done, the inside was "uncooked" and the rest of the cookie was tough and way too crispy. Solid rock the next day.

Slow Cooker Veggie-Beef Soup with Okra

I couldn't wait to break in my new crock pot with this recipe. I added some red pepper flakes and a few good shakes of oregano, which gave it more of an italian kick. I will definitely make this again.

Stuffed Cabbage Rolls

I love, love LOVE this recipe. The only thing I noticed that was a bit off was the amount of meat for 8 cabbage leaves. I had so much meat left-over that I made meatballs, which were just as fantastic. Will definitely make again.

Thai Red Chicken Curry

Good recipe. I thought it was a bit bland with only one tablespoon of curry paste, so I upped it to 2-3, and it was still mild. I ended up dumping some crushed (super hot) pepper flakes over the top which enhanced the flavor. Good curry should make your forehead sweat! I also used canned bamboo shoots and green pepper instead of the zucs. Definitely will make again!
