Pumpkin Gingerbread

What a yummy recipe! My son and I made this together. He normally doesn't like anything pumpkin, yet loved this bread! We even freshly ground some cinnamon, allspice, and cloves. We also cut back on the sugar to 1 cup sugar and 1 1/2 cups Splenda and couldn't tell the difference.

Grandma Ople's Apple Pie

This was my first attempt at making an apple pie. I made a flaky crust from scratch which was a little challenging. I thought I messed up this pie but I was so wrong. Even with my not-so-pretty crust, this pie was sooo delicious. Two points with this recipe: doing a lattice is a must as you pour the caramel sauce all over the assembled pie, and this will bubble over so be sure to have something underneath to catch the mess while it's baking. Follow this recipe the first time as you would probably be pleasantly surprised it doesn't need cinnamon or any other spices.

Glazed Meatloaf I

My kids don't usually eat meatloaf but this one was an exception! I used 1 cup of Italian breadcrumbs instead of bread slices and did not cook it in a meatloaf pan. Instead, I shaped the meat into a loaf and used a 11x9 pan to bake it on.

Perfect Turkey

Moist & flavorful! I used a cooler to braise my 20 lb turkey in and it worked perfectly. The turkey was already fully thawed and so I added ice to keep it cold overnight while it was in the cooler.

Easy Sausage Stuffing

Easy AND delicious! In the past, I went through so much more trouble to make stuffing. This recipe was wonderful. I also added some dried cranberries, chopped pecans, & diced apple. YUM!

Slow Cooker Adobo Chicken

Being Filipino, I was somewhat skeptical about cooking adobo in a slow cooker. Much to my surprise, it was wonderful!!! First of all, the adobo smell does tend to linger in the house, so I set up the cooker under the covered patio. Using white vinegar does help with the cooking odor, but I only had apple cider vinegar. I did add a couple of bay leaves and about 2 tsp of black peppercorns. I love onions w/ adobo, so I used 1 large sweet onion, sliced 1/3-1/2" so it wouldn't disintegrate during the cooking process. I was running a little behind in starting the cooker, so I put it on high for 2 hrs then low for the last 4 hrs. Also, baste the chicken hourly, if possible. The chicken fell off the bone beautifully and it was not at all dry. Spoon the sauce onto jasmine rice and chow down!! My family loved it!

Baked Ziti IV

This is a great recipe for large groups. I've made it several times already while changing an ingredient or two each time. Try replacing the cottage cheese with ricotta, and sweet Italian sausage or ground turkey for the ground beef. If using ground turkey, added salt, pepper, garlic, basil, & oregano. To help decrease the calories and fat even further, I used low-fat ingredients (cheeses, etc) and it still tasted great. I also tried different jarred spaghetti sauces and the best one was Paul Newman's Sookarooni. My 2 picky boys even enjoy this meal, which is a testimony in itself!
