Grandmother's Pound Cake II

Wow, this was great! I baked at 325 since I used dark pans and they were done in 45-50 minutes. Nice light texture but dense at the same time-different than any store bought cake I have ever tried. this is going to be my standard cake recipe for the trifles I like to make. I did add 2 tsp of my homemade vanilla since I love the flavor it gives. I was very careful about the mixing after I added the flour since so many seemed to have problems. The batter was very light and pretty much stayed where it poured so needed to be flattened a bit. Thanks so much for the recipe!

Strawberry Cheesecake

I normally do a water bath plain cheesecake but wanted to try something different. I didn't have enough frozen strawberries so did 1/2 raspberries. Everyone loved it, I think more than my plain cheesecakes. This one is a keeper! I did cook a little longer, I hate when the middle doesn't set so I cook more just to be sure. I also used 1/2 tsp of cinnamon like another had suggested. Thanks!

Red Beans and Rice with SPAM®

very easy and very tasty. I took a few others suggestions and added green pepper, garlic and fresh onion, and browned the spam. Also put on hot sauce when served. I have never had spam before but bought 2 cans on a whim, based on this I will buy a few more!

Gluten-Free White Bread for Bread Machines

THANK YOU SO MUCH! finally, a bread that tastes almost like real bread! My husband loved it and said he wants it again and he can eat real bread! I had to sub a few things I didn't have. I used milk, used brown sugar syrup instead of honey and tapioca flour instead of soy. Took one of the reviewers suggestions and added 1/2 tsp of baking powder. Also added a little flax seed and sunflower seeds for extra flavor. I used the standard 4 hour cycle on my panasonic breadmaker, no sweet or gluten free cycle available.

Chicken-Fried Steak Strips

It was good but too salty for my taste. Next time I am going to leave off the seasoned salt and only lightly salt it when tenderizing it. I let it sit after dredging with flour and it did not stick or lose its coat. Quick and easy-thanks for the recipe!

love these things! We don't like it as hot so we leave off the cajun seasoning. We also sometimes use the flavored cream cheese. Pineapple is our favorite!

High Temperature Eye-of-Round Roast

bought 2 of the eye of round roasts yesterday at costco figuring I would give them one last try. they always turn out with great flavor but tough and chewy. I was going to try them in a crock pot but decided to try this recipe since there were so many positive reviews. All I can say is it is the poor mans prime rib! Not quite as good as prime rib but cetainly a more affordable alternative! I pretty much stuck to the recipe and put only salt and pepper on it before baking. I did turn on the oven again (200) about 30 minutes before taking out since I was worried it would be cold. It was fantastic! Thanks so much I can finally cook a great roast other than a standing rib roast. Thanks also to the person who suggested the le cruset(?) type pan to cook it in, never thought to use that I usually cook them in glass but the porcelain/iron pan works much better.

Slow Cooker Ham

I made this with a regular ham-butt cut. It was really good and so easy to make. I did put in a can of pineapple with the juice but next time I am not going to bother. I think I will make it this way for the holidays if I can fit it in the pot! had to use the foil idea that others had mentioned since the lid didn't fit.

Delicious Ham and Potato Soup

love this recipe. I used low sodium broth and left out the additional salt. I also added extra flour to thicken per others advice, used skim milk. Added broccoli, carrots and extra onions. Next time I think I will add corn too. this is a great base, thanks so much for posting!

Sugar Peanuts

These are good. I had to stir for a long time about 30 min. on medium and the syrup didn't seem to get much thicker so I put it on high to get it going and that did the trick. I use a heavy non stick pan and stirred with my rubber spatula. Put in the oven at 300 so I wouldn't burn it for 30 minutes. Put a little cinnamon in the syrup and sprinkled some salt on them before baking. Very tasty. I was expecting a shiny peanut not crystallized but good none the less.

Boiled Peanuts

I have never made boiled peanuts before and had only tried them once-hated them. My husband spent summers in SC as a kid and loved them. When I saw raw peanuts on sale figured I would give them a try. I put them in a crock pot on low and cooked overnight-thanks for that tip! My husband loves them and I don't mind them either because they are not all mushy like the ones I tried before. Will definitely make again!

Roasted Okra

These are fantastic and so simple. I grew okra in my garden for the first time even though I had no idea how to make it. I figured if it was so popular down here in the south it must grow well and taste great! To me these taste like the vegetable chips you buy. They crisped up great and were not slimy at all. I don't know if the okra I picked was the right size, they were around 2-3 inches and pretty skinny but they tasted great!

Meredith's Cheesecake

I was making 2 cheesecakes and didn't have enough cream cheese to finish my 2nd one. I went looking for a recipe that only used 3 cream cheeses and this one came up. I baked both and this one turned out lighter and better with a lot less work than my other one! I did put it in a water bath like I always do and added ground walnuts and a little sugar to the crust for extra flavor. This is a wonderul and easy recipe. Thanks for posting, it is my new favorite cheese cake!

Cream Cheese Frosting II

Restaurant-Style Prime Rib Roast

I was skeptical of this recipe but decided to try it because of all of the positive reviews. I love it! The meat was moist and so flavorful, from now on this is how I am making my prime rib. I didn't have 3 hours to leave it out so left it for almost two. Next time I will give it the full time. Great recipe, thanks so much Barbara!

Hamburger Steak with Onions and Gravy

Loved this recipe! Doubled the recipe then made it two days in a row. So simple! The 2nd day I did double the gravy, there isn't enough of it. Also added mushrooms and used the vanilla suggested since I don't have sherry.

Quick Quiche

This was better than my regular quiche! Thanks so much for the recipe. It is easy to make. I didn't have bacon so I substituted ham. I also added some mushrooms that I had. Just a nice light dinner!

Fast Rice Pudding

had leftover rice, no milk so tried this recipe. While it isn't as good as real rice pudding it isn't bad and much quicker. Next time I will use less sugar-way too sweet. I also used less cinnamon and added vanilla at the end.
