Lemon Poppy Seed Muffins II

Baked Pineapple

This is a very good recipe. I was searching for one like this to replace a family recipe I’d lost and no one else in my family can seem to find either. This came out very similar to the one I lost. I know my original one didn’t have vanilla in it, but I really liked that as an addition, so I’m planning on keeping it. I also used the pineapple juice instead of the water since I don’t see the point of draining it and tossing it and then adding water. I actually only used ¼ c. of sugar because I wanted it as a side dish and not too sweet. I think it still turned out very good and fairly sweet, so depending on what I’m making it for will probably use either ¼ c. or ½ c. of sugar in the future. I think with a whole cup of sugar it would have to be a relish/topping or dessert type thing (I like the ice cream idea one of the other reviewers mentioned) and not really a side, it would be very sweet. I took it to a holiday potluck and it was served more or less room temp, by the time people ate it, but everyone liked it.

Day Before Mashed Potatoes

Very good. Of course I've added some things to it since I can never leave a recipe alone. I boil garlic cloves with the potatoes and then they are soft enough to get mashed up with the potatoes. I also usually end up adding a little more butter than the recipe calls for. Not a really calorie friendly recipe but then I only use this one for holidays or special occasions.

Double Chocolate Pie

This pie came out great - It was wonderfully chocolaty! I made it for my husbands B-day and he loved it. I followed the recipe exactly and it was perfect as is and I even live in high altitude. I didn't have any problems with it setting or anything else. The step where you mix the egg yolks separately in a bow is necessary so that the eggs don't cook when you add them to the hot chocolate mixture, if they cook as you add them then you will have lumps of egg yolks in your filling. Having them in a bowl and adding some of the chocolate mixture to them slowly takes the temp down a bit so this doesn’t happen.

Apple Pie Bread

This was ok, as several other reviewers said it was kind of doughy. I baked it longer than it said and it still didn't seem quite done in the center, but the top was getting pretty dark so I didn't want to bake it longer. The batter was very thick, I think it needs more liquid or less flour. And the cloves were just a little strong, I would add little a less cloves and maybe add some nutmeg. I think I will try it once more with a few alterations and see how it turns out, it defiantly has potential.

Chicken Things

This recipie was simple and very good. I almost always have honey and Worcestershire sauce in the house. I can never leave a recipe alone, so I added just a few things. I added some more pepper, a little garlic & onion powder and some red pepper flakes. I like spicy, and the red pepper flakes were just enough to add a little more kick. I also didn't drain off any juices, I tasted the sauce and wanted to keep it all, I just added the remaining honey and cooked it a little while longer till it was nice and thick and sticky. I will be making this again!

Honey Baked Chicken II

This recipe was easy and wonderful tasting! I used a Whole Grain Mustard with Garlic (because that's what I had) and it was great. The whole grains added texture to the sauce that made it look really nice. I didn't change any of the amounts and the taste was great. Also I put it all in a pan that was just big enough for the chicken and there was enough sauce to cover 3/4 of the chicken, and I only basted a few times and it was still tender and juicy.

Unbelievably Good Fruit Dip

This was a realy good dip! It was a little sweet for me so I added more cream cheese, and it was great. Our favorite to dip in it was Granny Smith Apples, the tartness was yummy with the sweet dip.

Eggnog Quick Bread

I made this for x-mas morning and we liked it alot! It filled the house with a wonderfull eggnog scent as it cooked. It is very mild but it was moist and yummy. I think we ate the most of it that morning. The only thing I did different was I used the "light" eggnog instead of regular, and it still tasted good.

Chicken Enchilada Dip

This was a wonderfull dip! I made it for a pot-luck at work and everyone loved it. They asked me to bring it next time we have another pot-luck! It was easy to make. I cooked it at home, and then heated it back up in the oven at work, it didn't seem over cooked or anything for being cooked twice.

Breakfast Muffins

Very good simple muffins. I used fresh strawberries and peaches as the friut. The strawberries turned out better, but both were good. I also added a 1/2 Tablespoon of vanilla to them.

Balsamic Vinegar and Olive Oil Dressing

This dressing was very good. I added more of the balsamic vinager and less oil, since I prefer a more vinager taste than oil, and added a little more of the spices than called for, but I was quite happy with the results.

Sesame Pasta Chicken Salad

This is a wonderful Pasta Salad. I have taken it to several potlucks and everyone likes it, even kids. I personally added more rice vinager and less oil (and used olive oil instead of veg.) but I tend to like things on the vinager side. Those were the only changes I made to the recipie.
