Garbanzo Stir-Fry

Simple and delicious, definitely add onions, salt and paprika. I added in red pepper along with the other veggies. Easy weeknight dinner, tastes great with rice and a salad.

Spinach Lasagna III

This is a recipe that would please most, very cheesy and hidden vegetables. This is too rich for the summer, but I would love to make this one again during the fall and winter.

Vegetable Kabobs with Rice

I did the vegetable skewers, used tomatoes,zucchini, mushrooms, onions and red peppers. Instead of the rice, I served them with "easy curry couscous" from this site, with tzatziki & some pita. Great filling summer vegetarian dish for the bbq.

Chocolate Frosting I

This is pretty thin in consistency, but it worked well for frosting a cake. I don't think I would have been able to use this for piping.

Vegan Fajitas

These were good right off the stove but the leftovers were not good at all imo. But anyhow I did add more spices to the veggies and I also added in spices to the beans (I used pinto, only because I was making black bean rice). I also made guacamole. I definitely recommend adding in less vinegar and more dry spices. Spices I used were salt, black pepper, paprika, chili powder, cumin, garlic powder etc.

Black Beans, Corn, and Yellow Rice

I didn't see yellow rice at my grocery store so I just added a pinch of yellow food coloring to mine. I did sautee onion and garlic in the beginning and added more spices (cumin, chili powder, garlic powder, salt, paprika, black pepper etc) to the rice for flavor. These were not anything really special imo, but they did look nice.

Peanut Butter Cup Cookies

Yummy. Very easy to make. I put peanut butter cups in the freezing while prepping. After adding them in I put them under the broiler for a minute, and then spread the edges. Peanut butter cups are my favourite chocolate, a great way to enjoy them.

Guaco-Tacos

Fantastic summer tacos. I added seasoning to the beans (I used black), which included cumin, garlic powder, chili powder, paprika, salt and black pepper. I also added a bit of lime to the salsa mixture with salt. Tyler Florence's guacamole recipe was fantastic with these. Green onions and lettuce were served to top these off. The easiest and freshest tacos that I have made to date.

Cilantro-Lime Rice

I almost forgot about this recipe as I made it awhile back. But I did not care for this recipe; it's nothing like the burrito place. I found it sticky and starchy tasting. I only remembered this disaster today because I finally got around to trying user { Heidi} 's suggestion (her review is right below the recipe as a popular review). That recipe was much closer to "the burrito place".

Tortellini Pesto Salad

This was great though I did not use tortellini, I just used whole wheat spiral macaroni pasta. I had a bit of extra pesto and was feeling for pasta salad so I decided to go ahead with this recipe. I used the veggies called for. I made the dressing with more pesto rather then mayo. I'm not too big on mayo based salads. I did not use any extra Parmesan as the pesto I had has a mix Parmgiano-reggiano plus other cheese so I did not see the point. I added in some chopped sun dried tomatoes to finish the dish off. It worked well, a nice twist to mayo based dressings. As for the spinach, I just chopped up baby spinach and added into the pasta salad.
