Mango Salsa

Reviewed: Jul. 23, 2012
Wonderful salsa. I subbed green onion for red (what I had on hand) and it was really great on several things I've used it on this week. I used it first on turkey burgers, then pulled pork, quesadillas, tortilla chips. Very versatile. Thanks for a great recipe.

Oriental Sesame Slaw

Reviewed: Jul. 20, 2012
I was looking for a good jicama slaw recipe when I came across this one. Outside of subbing white sesame seeds for black I made exactly as written. I enjoyed the nuttiness the sesame oil/seeds add. I really liked this slaw, although I couldn't really identify the jicama in it. My daughter who loves coleslaw was not a big fan of this version. As written I rate it a very good 4. I'll try some alterations next time....match sticking the jicama as others have done, as well I think I'll try adding some fresh pineapple bits to it to brighten it just a bit.

JELL-O® Double Chocolate Pie

Reviewed: Apr. 16, 2009
Very easy! My family loved the taste. I made this into mini pies for Easter, topped with sprinkles & cherries and it looked extra festive. I was able to get 12 mini pies from the recipe as is.

Creamy Coconut Cake

Reviewed: Apr. 16, 2009
We loved this cake. I will definitely make again, probably trying some of the variations others mentioned (pineapple, nuts, etc). I seemed to avoid the gooey bottom some reviewers experienced. I used chopstick and poked LOTS of holes all over it. I also really worked with the cream to keep it filling the holes and not just filling in down the sides of the cake. I think this helped to keep the moistness inside the cake rather than collecting at the bottom to make a soggy mess.

Old Fashioned Apple Cake

Reviewed: Nov. 2, 2008
This was excellent! The amount of oil I poured in the bowl and then the amount of glaze and how that would work out had me a bit worried, but went forward as written with good faith and had a fabulous product. I made exactly as is, no changes!!! I don't usually bring a new trial out in the open til I know it works, but did with this and it was a huge hit!

Summer Squash Puffs

Reviewed: Aug. 10, 2008
These were enjoyed by the whole family, even the kids. I pureed the cooked squash in my blender, which took care of tough skin problem as well as great measuring cup. I had some left over bacon from breakfast that I chopped up and added in. Only used 1/2 the batter first time I served, then made up the rest next night. I think the dough worked even better after being refrigerated 24 hrs. I also only used tsp. sized portions as suggested by others and they cooked great. Second night I dusted them with parmesan cheese, which was extra yummy! Looking forward to playing with other suggested variations in the future.

Martian Cookies

Reviewed: Aug. 8, 2008
My kids, friends and neighbors all loved these cookies enough that I was glad to have access to a pile of zukes. I had to cook a little longer than called for in recipe to get them a little golden. I also thought they tasted better the second day after they'd softened a little. Yummy...they were a hit with all.

Lemon Zucchini Drops

Reviewed: Aug. 8, 2008
Delicious cookies! My kids really loved them too! A really nice tender cookie. I didn't experience the dryness other reviewers spoke of. I think if they try them with the icing it helps them to not seem dry. I might try adding some lemon juice to the dough next time to amp up the lemon taste, but there's sufficient lemon in the icing to give a nice light lemony taste. I found I was able to halve the icing recipe and had just the right amount for all the whole batch.
