Colleen's Slow Cooker Jambalaya

Reviewed: Feb. 24, 2010
The universe was definitely working against me while I was attempting to make this; beginning with my slow cooker blowing up, however I was a trooper and the Jambalaya and I both survived to tell the tale! Even with all the drama, this turned out delicious and will most defiantly join the ranks of our families most favourite recipies!

Glazed Meatloaf II

Reviewed: Aug. 25, 2009
This was my first attempt ever at making meatloaf. It's a shame I think that meatloaf in general seems to have kind of a bad rep. It is so easy and tastes great. My family (including 3 kids) loved this recipe. Will definately be a regular meal in our household!

New Orleans Shrimp Toss

Reviewed: Mar. 7, 2008
I thought this meal was great! I didn't have any of the fancy cream of chicken soup (nor did the grocery store) so I had to use the regular kind. At first I thought it was quite salty, but on top of the corn bread it is perfect!

Easy Decadent Truffles

Reviewed: Feb. 15, 2008
I made these for my husband for Valentines' day and he couldn't believe that they were homemade. I followed some peoples suggestion of just using 2 cups of the sugar and 2 cups of the chocolate, but next time I will use 3 cups of chocolate as I didn't think they were chocolaty enough. I covered half in milk chocolate with a white chocolate drizzle and did the opposite for the other half. Next time I might also add a bit of Nutella in with the mixture to see how that turns out. These are really good and really easy-great for gifts!

Taco Pie

Reviewed: Feb. 14, 2008
I really liked this meal and it was nice and easy for what I needed it for. I had never used the crecent dough before so I found that a little bit fiddly (although not in the way that dough from scratch is fiddly!). I added some mushrooms to my meat and after baking the base I spread refried beans on the base, then layered the meat, sour cream, cheese and topped with the doritos. I didn't bake it again though, I just broiled it. Very yummy and my very picky son even wanted seconds!

Spicy Chicken and Sweet Potato Stew

Reviewed: Feb. 13, 2008
This meal was delicious! I feed 9 people of a meal time and it was a huge hit. I doubled the recipe and only had one pepper so I used that plus some chopped mushrooms. I substituted the water for all chicken broth and just before serving I added about 3oz of cream cheese. My husband and I both tried the stew before adding the cream cheese and he was a little hesitant about that idea as he felt it was great without it, but I just felt like something a bit cozier (it was a really cold day up here in Canada!) so I took the plunge and added it. It just gave it a subtle creamy feel without taking away the really nice flavor of the original recipe. I will definately be making this again and I think next time I will try it in my slow cooker. Thanks!

Crispy and Creamy Doughnuts

Reviewed: Feb. 10, 2008
This is the first time I have ever made doughnuts and they were a HIT! Everyone that had them (11 people) said they were just as good if not even better than their namesake. I followed the recipe exactly and they were light and fluffy and I didn't find the dough to be sticky at all. The best thing for me though about making these was they inspired me to finally order my Kitchenaid stand mixer that I have been coveting for oh so long! Will definately make again!
