About this Cook
I love to cook and have been married for 47 years. Now in retirement, I like to try new recipes but prefer those without a ton of ingredients. I prefer to substitute and experiment with what I have on hand, using a recipe as a guide.
My favorite things to cook
Soups, stews, casseroles are favorites. I enjoy cooking Italian and Mexican dishes. I also love to bake breads, quick breads, muffins, cakes.
My favorite family cooking traditions
The only traditional thing I make at this point is Butter Crunch Toffee at Christmas. I send it to all four adult children and their families, as well as give it as small gifts to neighbors and friends.

Slow Cooker Creamy Potato Soup
This soup was very good and easy to put together. I made some changes to use what I had on hand. Used frozen hash browns, used 1 c. heavy cream and 1 c. milk. Substituted an additional 12oz milk for the evaporated milk. Put half the bacon in with all ingredients and sprinkled half over each serving, along with grated cheddar. Go lightly with salt if you are not using low sodium broth. Next time I will add 1 c. frozen or fresh corn near the end of cooking time. Definitely will make it with my changes again.

Oven Roasted Teriyaki Chicken
Loved this recipe. Be sure to use low sodium soy sauce to avoid the too salty complaint some reviewers made. I used boneless thighs and reduced the cooking time to 40 min. Next time I will double the sauce so it can be served over the rice I make to go with the chicken. So very good!

Cheesy Chicken Asparagus Casserole
This was delicious! The recipe calls for three cans of soup, but it is very good and not so soupy with two. Also, shredded Parmesan cheese can be substituted for the cheddar/jack. Everyone loved it.
