Easy Grilled Chicken

I did not care for this recipe at all. I must admit I am not a fan of Italian dressing but I somehow thought it would be better as a marinade. I was wrong. It's very heavy on the vinegar flavoring. I will not be making this dish again.

Broccoli Chicken Divan

I have to admit, I didn't think this was going to turn out well. It seemed easy enough so I thought I'd give it a try but it sounded a little dull. I changed my mind after one bite. It is so good. I did cook the chicken with seasoning salt and onion powder for a little more flavor. Other than that, I kept the recipe exactly the same and both my fiance and I thought it was excellent.

BBQ Chicken Pizza

This is an excellent recipe. BBQ chicken pizza was always a favorite of mine at one of our local pizza parlors. Now that I know how easy it is to make I don't ever have to order out again. I used a spicy bbq sauce and skipped the pepperoncinis (but had some on hand for my fiance who thought they were excellent). After having this for dinner once, I made it again less than a week later. Big hit with me and my man! :-)

Seven Layer Gelatin Salad

I made this in a trifle dish for my sister's colorful wedding. It was beautiful and tasty but I'm only rating the recipe three stars because I had major trouble with the directions. I ended up having to throw my first attempt out because, despite following the directions exactly, the layers melted one another and formed one big black unappetizing layer. My second attempt, however, I decided to stir in 3/4 cups of ice cubes instead of the water to bring down the temperature of the gelatin before adding it to the solid layers. That worked MUCH better. I also let them solidify for a full 60 minutes instead of 45. I read on the internet that there might be problems with letting them completely solidify because the layers may end up separating when they are unmolded but I had no problems with that (of course, I didn't "unmold" the layers because they were in a trifle dish...but when dishing out the layers they adhered perfectly).

Chocolate Cookie Pizza

This was sooo good!! I was having a friend over for pizza and a movie and thought this would be great to serve as a fun dessert. We had a great time decorating it with all of our favorite candies (we used m&ms and white chocolate chips...not the other things mentioned on the recipe). I was worried it was going to be too sweet after tasting the frosting but it was just rich and chocolaty and delicious. It was even better the next day after sitting in the fridge overnight.

Easy Masoor Daal

I made this with brown lentils because I couldn't find any red lentils at my grocery store but it still turned out great. I served it with rice and it was delicious and filling...and very easy to make. I have no complaints.

Chili-Lime Chicken Kabobs

I was surprised that there really wasn't a lot of flavor. I could barely taste the lime and, although the chili flavoring was a little more obvious, it wasn't spicy at all. It did not live up to my expectations.

Marshmallow Fondant

This was my first time using fondant and I have to say I was impressed. It was a little difficult to work with at first but once I got the hang of it, I had no problems. It tastes much better than other fondants that I have had in the past and it looks great. I will definitely be using this recipe again. Thank you!

Cream Cheese Frosting II

This recipe is delicious. I made it just as stated but I do wish I had taken the advice of others and added a cup more sugar. The flavor was perfect but the consistency was soft, even after refrigerating. To make it a little thicker, next time I will definitely add more sugar.

Caramel Macchiato Cheesecake

Okay, there must be something wrong with me. This didn't turn out well at all. It was one of the worst tasting cheesecakes I have ever had. I have to think it was something I did since everyone else seems to love this cheesecake. I gave it two stars because I did like the graham cracker crust (which I am normally not a fan of). I used cinnamon graham crackers. Other than that, I don't think this cheesecake has any redeeming qualities. I may try making it again, though, just to be sure it wasn't user error.

Big Soft Ginger Cookies

I do not like the consistency of these cookies. I was expecting them to be soft like a snickerdoodle but they were more like a muffin consistency. Way too soft for a cookie. The taste, however, is EXCELLENT! I followed the recommendation of others and added orange liquor (I didn't have orange juice) instead of the water. I froze the dough so that it would be easier to form them. And I made a sugar cookie glaze with orange extract to go on top. As good as they taste, I probably won't eat them because the texture is so off-putting to me.

Sirloin Steak with Garlic Butter

Yum, Yum, YUM! I don't have a grill so I made this in the broiler and it was delicious. I paired it with garlicky baked butternut squash from this site. It was a very tasty meal!

Rougemont Applesauce Cake

I made this as a special request from my fiance. We both thought it tasted fine but there was nothing special about it. Maybe it should be a little sweeter. Oh well. Edit: The next day it was much sweeter. I guess it just needed some time for the flavors to settle. It also stayed very moist for a full week. I also forgot to mention that I made my own applesauce for this recipe and I added a glaze. My fiance wanted an applesauce cake like his Grandma used to make so I did my best to accommodate.

Creamy Chocolate Frosting

So yummy! I followed this recipe exactly...except for one thing. I couldn't bring myself to buy a 2 cup container of evaporated milk to only use 5 Tbsp so I made my own by reducing a little bit of milk. I added the milk while it was still hot which I was worried would affect the consistency but it didn't. It came out rich and delicious. This will definitely be my go to recipe whenever I need chocolate frosting. YUMMY!!

African Peanut Soup

I am surprised at how many people gave this recipe high ratings. I made it for my family and while there was nothing unpleasant about it, there was nothing enjoyable either. I made it EXACTLY as stated (and added a dollop of sour cream just like suggested in the description) but after eating a bowl full I decided there was something missing. It was sort of spicy, sort of tangy, sort of sweet, sort of a lot of things. None of the flavors were fully developed and all of them were competing for attention. I decided to add more spices but even that didn't help. I don't know what to say. By no means is this recipe disgusting but I certainly will not be trying it again.

Yummy Honey Chicken Kabobs

These were delicious. I made the kabobs with yellow and green zucchini, chicken, onions, and red and green peppers. I let the chicken and veggies marinade all day and I broiled the kabobs for about 15 minutes (since I don't have a grill). They were absolutely delicious. However, they seem to lose most of their flavor when reheated... which is a shame because I made a lot! Next time, I might make extra marinade to put over the kabobs before reheating.

Hot Spinach Red Pepper Dip

So yummy!! I will definitely be making this again. It was incredibly easy to make, only required one pan to be dirtied and it tastes divine! I accompanied the dip with carrots and green peppers (I wanted to use red peppers but I ran out). The sweet flavor of the carrots fit the dip perfectly. I didn't care for the green peppers as much. Next time I will definitely use red peppers, carrots, and bread. And believe me, there WILL be a next time!!
