Chocolate Chip Banana Bread II

Wonderful! I could only scrounge up 5 bananas and I used "butter flavored" shortening. It still turned out extremely moist and my family is raving!

Baked Fried Eggplant

I used this recipe to make eggplant parmesan. I have always LOVED my version, but the number of calories is horrendous since the eggplant soaks up probably a cup of butter and oil. I did as another reviewer did and drizzled some olive oil before I baked it using this version, but that probably wasnt even necessary. Tasted the same as my usual resipe, but not so oily... now I can enjoy it more often and not feel so bad about it. Also not so messy! awsome!!

Baked Orange Roughy Italian-Style

Really Good! One of my favorite fish recipes. It doesnt over power the flavor of the fish, which you wouldnt want to do to Orange Roughy! I just use a basting brush to put some butter on the fish so it is not too much, then sprinkle the bread mixture over only one side. I think that is healthier and not as messy. It doesnt need it on both sides anyway because it has a lot of flavor. I serve it with a small side of shrimp alfredo and fresh green beens. YUM!

Gourmet Mushroom Risotto

This was okay, and my first attempt at risotto. My husband really didn't care for it and I guess I prefer the cheese risotto I have had in restaurants. Maybe the mushroom flavor was a little too strong, even though I love mushrooms. I might try it again with some other flavors

Downeast Maine Pumpkin Bread

The only other pumpkin bread I've had is from Starbucks, and so that was my expectation, and it tasted just like it! I made made 2 loaves for my family of 4 for the weekend, thinking I would have to take 1 to school Monday. Nope. It was ALL gone by Sunday Morning!!! Also, I was distracted while cooking and forgot to separate the dry and wet ingredients, so if you just throw it all in one bowl it is super fast and still gets 5 stars!

Broiled Tilapia Parmesan

My husband and sister love this! She doesnt even eat fish. I think it is a little heavy and takes away from the fish, but if you are not a huge fish lover, you will love this. I would have given 4.5 stars if I could have!

Easy Slow Cooker French Dip

Wow! I used a 2 lb sirloin roast and when I cut it after 4 hrs, it was difficult to cut and not very tasty, didnt think I would like it at all. Then, I let it sit another 2 hrs in the crock pot, toasted the hoagies on the inside, topped with mozzerella and it was s SO good!! Then I heated leftovers in a saucepan the next night, added caramelized onions and mozz. OMG it was even better... so tender, it melted in my mouth and I would never have thought I was eating roast beef!! I will be making this much more often. (And I am not even a beef sandwhich fan!)

Sausage and Bow-Tie Pasta Florentine

This was excellent! I am always looking for easy to make pasta recipes that my husband will love and did!! I make the alfredo from scratch... a must and so easy! I just melted butter, cooked the garlic in the butter as directed, added teh heavy cream, parmesan, salt and pepper, brought to a boil, reduced to simmer and let it cook down. Then I just follow the recipe as is. It is a great way to get some spinach into a very rich, delicious meal! I will make this probably more than chicken alfredo, thanks!

Delicious Ham and Potato Soup

My mom makes delicious potato soup that we even requested for Christmas dinner once and I have to say, this was even better! The milk and butter gave just a hint of sweetness and the ham made it just salty enough. After reading other reviewers, I only started with 2 1/2 cups of water, but then I ended up adding another cup anyway, and it was still pretty thick. I added a little cheese to serve. My husband is ooing and aahing as I write!

Grandma Ople's Apple Pie

Pecan Pie IV

My family loved it! I dont even like pecan pie, but this was great. It had a wonderful crispy candy top from all the sugar. I did have to bake it for 75 minutes
