Rhubarb and Strawberry Pie

I'd never made this type of pie before, and was very happy with the results with this recipe. It was the perfect balance between sweet and acid (from the rhubarb). Thanks for the great recipe!

Amazing! Definitely cut down on the soy sauce, and make sure to add enough pasta, or else this becomes very salty. With the right proportions, it's terrific.

Strawberry Spinach Salad I

I made this for a friend's birthday party last summer and people are STILL talking to me about it! They've made me promise to make it again when strawberries are back in season. The key is in the sauce - it makes it unique and absolutely delicious!

Vegetable Dip

I have made this for at least three parties, served with fresh vegetables, and people go CRAZY for it! It is always the first thing that disappears. I always use low-fat mayonnaise and nobody ever notices. Be sure to let it sit in the refrigerator for a few hours before serving to let the flavors mix together - it makes a huge difference in the taste.

Stuffed Zucchini

I tried to make this with round zucchini (looks prettier) and it turned out fine, but needed a few adjustments, notably in the cooking time (add a few minutes, depending on your oven). I would also suggest adding the tomato sauce to the meat before stuffing the zucchini. Otherwise, it works just as well as with regular, long zucchini!

Lemon Curd Bars

I got a jar of lemon curd from my mother-in-law and having never tasted it before, decided to try it in this recipe. As someone who generally doesn't like lemon-flavored desserts, I was skeptical about trying it, but I am so glad I did! My pan was a bit smaller than the one listed in the recipe, so the topping ended up being a bit thicker (like a crumble) but no one seemed to mind! Be sure to mix until the dough is nice and crumbly, as the bigger chunks of butter will make the taste of the bars uneven. I used less butter (2-3 T. less) the second time and it turned out just as good. I also replaced the chopped almonds with shaved almonds, making the topping less crunchy.

Traditional Mashed Potatoes

More than worthy of a 5-star rating, these potatoes were easy to make and very much appreciated! Thanks to the reviewer who suggested to add milk when boiling - they came out much creamier the second time I made them.

Simple BBQ Ribs

These turned out some amazing ribs, and I have made them several times since. Add a side of mashed potatoes and some cornbread for the full experience - it's worth every calorie!
