About this Cook
I am married with 3 children and work full-time+ in sales, so I travel alot. I love to cook when I'm home and usually make food that is low in fat and highly seasoned. I modify most recipes and use low or non-fat ingredients without losing flavor.
My favorite things to cook
Anything with garlic! I also love to try new recipes and experiment-especially with wine!
My favorite family cooking traditions
My Great-Grandmother made a sour potato soup that was amazing! My friends all loved it and it remains the ultimate "comfort food" for me.
My cooking triumphs
Every time I can throw together a relatively healthy meal that everyone will eat with whatever ingredients I have on hand!
My cooking tragedies
Too many to mention-all usually when I was cooking for guests!

Apple Crisp II
The best ever!! I use 11 Granny Smith's apples (no subs) without the water and add 1/2 tsp nutmeg. I also mix the flour mixture in with the sliced apples prior to placing in the 9x13 pan. Then double the crust recipe. It is easier to dump the crust mixture onto the middle of the pan of apples and gently spread out to the edges and pat down. The pan will be heaping, but the apples will cook down so the finished product is level. I get begged to make this and everyone says it's the best they've ever had. For a special treat serve with Mrs. Richardson's Butterscotch Caramel ice cream topping and vanilla ice cream. Thanks Diane!!!!

Basic Cream Cheese Frosting
YUM! I use this on Paul's Pumpkin Bars and my family devours them! I've tried other recipes, but this one beats them all!!

Chantal's New York Cheesecake
I just made this for Thanksgiving, and it turned out perfect! No cracks and very dense. Everyone loved it so much they finished it off even though there were 4 other desserts. In fact, my 16 yr. old son asked me to make it again today! I followed the recipe (except for the crust-I used purchased graham cracker crumbs and added some cinnamon), made sure the ingredients were room temp. and also greased the sides of the springform pan. I didn't set the pan in a water bath, but I did put a 9x11 pan of water on the bottom rack. I would highly recommend this recipe to anyone that loves cheesecake!
