Lower Fat Banana Bread II

Of course this doesn't taste like original banana bread but it is still good and that's all that matters!! I used 1/2 white flour and 1/2 wheat as well as using 1/2 splenda and 1/2 sugar. I also used 3 bananas. It was very yummy!!

Spinach and Mushroom Frittata

I use the kind of spinach that comes in a bag instead of a box, so I could just add it to the mixture frozen and use as much or as little as I wanted. I also added frozen onions and peppers. (no need to cook prior to baking) I used mozzerella cheese because I didn't have any ricotta and it came out excellent with about 30 minutes of baking!

Tangy Glazed Chicken

Exceeded my expectations!! I made this exactly as the recipe states and it was excellent! I used bone-in chicken, and I definitely recommend it. I am concerned that boneless would get way too dry. P.S. Forget the cornstarch; the people who used that just aren't waiting long enough for the sauce to thicken!

Carrot, Potato, and Cabbage Soup

This soup was SUPER easy. I probably used a little more veggies than the recipe said and ended up adding about 3 more cups of broth. I did not blend at all, and it was delicious.

Slow Cooker Marmalade Curry Chicken

Smuckers makes a Low Sugar orange marmalade that does not have artificial sweetener. I used this bc I didn't want the recipe to be too sweet and it was delicious!! I made no other changes except that I used 3 bone-in chicken breasts cooked on High for 3 hours. I will definitely make this again!

Low Carb Cauliflower Leek Soup

This was great! I added thyme and italian seasoning. Instead of cream I added some water to a can of cannelli beans and blended until smooth. This thickened the soup and added protein...perfect!

This was great! I cooked it on high for about 4.5 hours. I wouldn't make any changes except to say be sure to use LOW SODIUM chicken broth. The turkey ham is very salty.

Quick Fish Tacos

This was excellent!! I made very minor changes: cooked the red cabbage in a pan for about 5 min, just to soften slightly. Used fat-free sour cream. Also, added cilantro to the slaw and as a garnish on top. I don't believe the recipe instructions included what to do with the cilantro. This was the perfect dinner for a hot day!!

These were yummy....added dried cherries which was awesome! Also used 1/2 butter and 1/2 shortening as other suggested and refrigerated the dough for 1 hour prior to scooping.

This is cake. FYI. I made it low cal and healthier by using whole wheat flour, 1cup sugar instead of 2, unsweetened applesauce instead of veg oil, and instead of 4 eggs, I used 3 eggs and 1 serving of egg substitute. I may try 2/2 next time. Baked exactly 25 minutes and is very moist and fluffy! Yum!
