Baked Fish Creole

I liked this recipe, but I changed it a lot. I'll give you the details because my photo is currently the one up there. I didnt have hot pepper sauce or chili sauce, so at that point in the recipe I added 1/4 cup tomato paste and about 4 tablespoon creole seasoning. I also used Whiting filets instead of cod and broiled the fish instead of baking, combining all three parts at the end. This is how I would make it again.

Carrot, Potato, and Cabbage Soup

This soup was SUPER easy. I probably used a little more veggies than the recipe said and ended up adding about 3 more cups of broth. I did not blend at all, and it was delicious.

Turkey Cabbage Rolls

This is excellent! I've made it twice and both times added more rice, I think about 1 cup uncooked rice in total; I like this ratio of rice:meat much better. Used the rest of the head of cabbage to make soup!

Tangy Glazed Chicken

Exceeded my expectations!! I made this exactly as the recipe states and it was excellent! I used bone-in chicken, and I definitely recommend it. I am concerned that boneless would get way too dry. P.S. Forget the cornstarch; the people who used that just aren't waiting long enough for the sauce to thicken!

Wild Rice Soup

The soup was pretty good if following the recipe. However, next time I will probably add 1/2 cup instant white rice, 1/2 cup water, and a bunch of mushrooms. This soup screamed for mushrooms!!

Spinach and Mushroom Frittata

I use the kind of spinach that comes in a bag instead of a box, so I could just add it to the mixture frozen and use as much or as little as I wanted. I also added frozen onions and peppers. (no need to cook prior to baking) I used mozzerella cheese because I didn't have any ricotta and it came out excellent with about 30 minutes of baking!

I'm sure this recipe is good but I could not bring myself to add the full 1/2 cup of butter. Not for a side dish. I added a minimal amount of butter and that way it wasn't very good.

Slow Cooker Roast Beef

Quick, easy, good. I only cooked 8 hours on low with onions, carrots, celery and potatoes and it turned out great. There was way too much fat, though, so if I made it again I might try what the one reviewer did; cook the meat and refrigerate and remove the fat the next day before adding veggies.

Lower Fat Banana Bread II

Of course this doesn't taste like original banana bread but it is still good and that's all that matters!! I used 1/2 white flour and 1/2 wheat as well as using 1/2 splenda and 1/2 sugar. I also used 3 bananas. It was very yummy!!
