About this Cook
I have been married for 16 years. I have a son and a daughter. I would have to say that my cooking has definately improved over the years. My husband says that I am the best cook, but he is probably a little biased. There are a lot of things that my family won't eat (except me) so at times it seems like I am limited in what I can do.
My favorite things to cook
Ny favorite things to cook are probably party foods. That is the one place that I can try out new recipes. I have recently started baking a lot of cakes and have found a real passion for it. I am always looking for quick and easy recipes that I can make during the week. I work a full time job so it is sometimes tough to fit dinner into that as well.
My favorite family cooking traditions
I love cooking for any holiday or get-together.
My cooking triumphs
Baking is #1. Other than that, it would be hosting and catering parties.
My cooking tragedies
There have been a few. I made a slow cooker "coca-cola chicken" once that went to the trash can when we pulled it out. And the first time I made fried chicken it was still raw on the inside.

Joy's Prizewinning Trifle
I changed several things just because of what I had on hand. I substituted marscapone for the sour cream and frozen mixed berries for the strawberries and kiwi. I did as other reviewers and made the pudding according to the package adding a little extra vanilla and soaking the bananas in the pineapple juice. It took less than 10 minutes to put the entire thing together and it looks beautiful. The pudding mixture tasted amazing.

Apple Enchilada Dessert
Everyone loves this recipe. I don't measure out the cinnamon. I use the fresh ground cinnamon and just sprinkle some on each one. I am sure that I use over 1 tsp. I have tried this recipe using cherry, apple, strawberry, and blueberry. So far I haven't found one that doesn't taste good!
