Hot and Spicy Tofu

I sliced all the veggies in 1/4 x1/2 in. long strips. Switched out peanut oil for veg oil. (Allergy in house). Delicious!

Coconut Curry Tofu

Omitted mushrooms, I felt they would get lost in this dish. I would increase the spice next time, a little mild for a curry dish.

Tuna Casserole II

Awesome! Did add 1/2 cup half/half for more moisture. Shredded the zucchini and carrots. Reduced pasta to 8 oz, as recommended. For the the reviewers that substituted this to death, I highly recommend making without omitting all the veggies, otherwise you may as well make tuna helper!

This was really good! Didn't miss meat at all! We always joke with vegetarian dishes will need a side of beef or chicken. This was a tasty sandwich that filled everyone up.

No photo posted... I imagine since the dish isn't pretty! It needed salt/soy and more color. Would add diced tomato if I made this again.

Real Hummus

Don't use liquid from can! Peeling Garbanzos is key to smooth Hummus. Added 1/4 cup veggie broth to make for missing liquid. Excellent!
