Layered Mint Chocolate Fudge

Great recipe! I switched the white sugar to brown. And ended up using about 3 1/2 cups of flour. I sprayed some canola oil Pam on the wax paper before rolling it out and they came off of the paper a lot easier.

Creamy Peanut Butter Fudge

This was the first time that I've made fudge, and I carefully followed the directions (and the directions/reviews regarding time for boiling and not touching it while it boils). It turned out a little crumbly (although I'm not sure what it's supposed to look like when you spread it in the dish), but I just pressed it out and it turned out great!

Zucchini Brownies

I've never found a recipe on here that I followed exactly until this one! I thought for sure that it was too thick.. I basically had to use my hand to PRESS it out into the pan! But, it turned out PERFECT!! My husband didn't even realize he was eating zucchini either!!!

Great recipe!! I added some seasoning to the batter that included paprika, garlic powder, cayenne pepper, oregano, and thyme. I also used the sauce that was suggested by another reviewer; delicious!!

Perfect Pumpkin Pie

Great recipe! I also had an unbaked pie crust that I put in the oven for about 10 minutes at 425 degrees so it wouldn't be soggy. I also heated the pie from the can as suggested.

Apple Dumplings I

Awesome recipe! I used a half cup of brown sugar and a half cup of white sugar. I also cut the apples into smaller pieces and coated them in sugar and cinnamon before putting them in the dough. I didn't add the sauce about 5 minutes before they were supposed to come out of the oven. I also rotated the dumplings after 20 minutes and again after 10.

Blueberry Zucchini Bread

I'm not sure what I did wrong. It may have been that I used to many zuchinni or didn't drain the zuchinni enough. The bread turned out a bit burnt on the bottom and soggy and undercooked in the center. I think next time I will try using 2 larger loaf pans and cooking it longer.

Rigatoni with Eggplant, Mushrooms and Goat Cheese

I only gave this recipe 4 stars because of the adjustments I made. Prior to cooking the eggplant, I sweated them (sliced the eggplant and then layed out the slices, sprinkling salt over them. Let them sit for about 20 minutes then rinse them in cold water and pat dry, then continue to cut into 1/2 inch cubes. Sweating them helps to eliminate any bitterness that is in the eggplant). The sauce had almost no flavor. I increased the amount of red pepper flakes by 1/4 tsp. I increased the thyme by 1 tsp. I also added 1 tsp of oregano, 1 tsp of basil, 1/2 tsp of garlic, and a dash of pepper. These extra spices helped turn this recipe from bland to spectacular! Oh, and after reading other reviews, it seems some people were complaining about the pits of the olives, Take the pits out!! Also do not use more than 15 olives, as they are very strong.

Apple Strudel Muffins

I followed the suggestions of other reviews and added 1/2 tsp of each cinn. and nutmeg, I also added more apples (about 4 medium honeycrisp apples total). I think I messed up something with the topping because it did not turn into what that picture up there looks like.. it was still delicious though! I also used 1/2 cup white and 1/2 cup brown sugar. I would also suggest using the double layered muffin paper. The apple juice is very sticky and may make the muffins difficult to remove from the tray.

Boilermaker Tailgate Chili

Excellent! This was the first time I made chili and I followed this recipe (and the suggestions of reviews) and it turned out wonderfully! I also used a crock pot, and I have the standard size crock pot (5 quarts, I think), I would suggest using a larger one. Maybe a 6 quart, at least.

Slow Cooker Pulled Pork

Excellent recipe! I doubled the meat, soda, and bbq sauce. I also seasoned the meat with minced onion flakes, salt, pepper, and garlic powder. Tastes just as good reheated!
