Chocolate Chip Pumpkin Bread

This recipe is a keeper!! A friend of mine said, "This is so good, it's scandalous!" Seriously that good! The first time I made it, I substituted the pumpkin puree for pumpkin pie puree and didn't use the cinnamon or nutmeg. It turns out just as good! Second time I made it like the recipe, though for the sugar I followed the advice and did 1 cup brown sugar, 2 cups white sugar. I also added in a teaspoon of vanilla and reduced the nutmeg to 1 teaspoon. Yields one loaf and 12 muffins! :D Enjoy!! :)

Fried Rice with Cilantro

This is the equivalent of what most Thai restaurants serve as their Thai Fried Rice! Be careful with the fish sauce...AKA don't spill it around because it stinks! (but it's good in the food). Be precise with the soy sauce, because if you add too much it gets way too salty.

absolutely delicious! great on a hot summer day. [tip] white chocolate cools QUICKLY (especially cheaper brands like nestle), so work quickly. otherwise you'll end up with little chunks of hardened white chocolate.

Peanut Butter Cup Cookies

made them as gifts of appreciation, and they were great! really easy to make and not a lot of time required. would definitely suggest freezing the peanut butter cups beforehand. enjoy! :)

Best Big, Fat, Chewy Chocolate Chip Cookie

Definitely the BEST cookie ever. Some tips: (1) refrigerate dough before baking, (2) add a dash of cinnamon, (3) my big cookies took around 17 minutes to bake, (4) i made smaller ones and it took around 10-12 minutes to bake, (5) eat with milk or ice cream!! :D :D ------- A good surprise: use 1 cup of mini chocolate chips and 1 cup of finely chopped pecans. turned out to be AMAZINGLY delicious! --------

Chantal's New York Cheesecake

wow. wow. wow. wow. WOW. this was my first attempt in making cheesecake and i was totally blown away at the end result! i was really afraid of overbeating the cream cheese, so i beat the cream cheese with a beater and then mixed in everything else by hand. however, i was still a bit paranoid, and might have underbeat the filling (there were small little lumps). however, this recipe turned out to be AMAZING. it was creamy and had a great texture!! on top, i made a raspberry sauce (10oz frozen raspberries, sugar, cornstarch, little bit of water to boil; drain seeds). so i drizzled the raspberry sauce and garnished with fresh blueberries make a killer combo! :D i will be most definitely making this again!!

Shrimp and Feta Cheese Pasta

i used chicken instead of shrimp and it came out fantastic!! I suggest adding some veggies like julienned green peppers, red peppers, and some onions when you're simmering the tomatoes! Definitely a favorite!

Mini Cheesecakes I

Amazing recipe! Much easier and less time than the traditional cheesecake! I didn't have a mini muffin tin, so I made them in regular muffin tins. I halved the recipe in half, and I ended up with 9 regular sized cheesecakes. And I baked for around 17-18 minutes. Blueberry sauce (that I got from this site) was an absolutely perfect addition with little prep! I will most definitely be making this again! :)

Flourless Peanut Butter Cookies

amazingly and surprisingly delicious! you absolutely cannot tell there is no flour in them! definitely a recipe keeper!! :) -- tips: substitute with 1/4 cup white sugar, 1/2 cup brown sugar, and add a bit of vanilla extract. I made mine into small bite sized cookies, reducing bake time to 6 minutes. --

Awesome Baked Sea Scallops

awesome like the name says! i unfortunately did not have a baking dish, so i prepared everything minus the breadcrumbs and cooked them over a pan (flipping occasionally) until they were well cooked. transferred scallops with a baking pan, covered with breadcrumbs, and into an oven on broil. should take around 30-40 seconds on broil for the breadcrumbs to be nice and toasty. enjoy!

Brown Family's Favorite Pumpkin Pie

the best pumpkin pie ever! I substituted the pumpkin puree and used pumpkin pie puree instead, thus not adding the nutmeg. I still used 1 teaspoon of cinnamon. also didn't have sweetened condensed milk, so followed previous reviews, and used 1 can evaporated milk, 1 cup white sugar, and 1/2 cup brown sugar. turned out absolutely AMAZING. though using the substitute results in like around 2 cups of leftover pie filling with one 9" deep dish pan. also cover the crust with foil to prevent it from burning. :) you can also forgo the streusel and melt dark chocolate and drizzel on top. an amazing combination!

AMAZING cake!! very dense, moist, and very chocolatey! :D taken advice from previous posts: (1) use 1/2 cup of veggie oil, (2) 1 cup of MINI chocolate chips so they don't sink, (3) 1/3 cup of milk ENJOY! :D

DELICIOUS! --- 3 cups of grated carrots is around 4 or 5 carrots depending on the size. --- use a sieve and spoon portions of crushed pineapple at a time to drain the liquid. --- yielded 29 muffins with 20 minute baking time

Honey-Ginger Grilled Salmon

Very delicious! I make it all the time. Make sure not to marinate the salmon for too long, or it gets too salty and such. 15 min - 30 min is just perfect!
