About this Cook
I live in a rural area and work from home (medical transcription), which I love. I am married to my 2nd husband; we each have a grown son and 6 grandchildren between us. Enjoy most crafts; jewelry making, polymer clay, candle making, counted cross-stitch, as well as cooking. Have tried my hand at sewing and enjoy, but far from expert.
My favorite things to cook
Soups, casseroles, breads/rolls, grilling in the summer. Love to try new recipes. I am trying to learn more ways to use fresh ingredients for health and taste. Also exploring ways to use herbs and spices.
My favorite family cooking traditions
Homemade everything, although I'm not adverse to using some already made ingredients in a dish, as long as it tastes good! I love applesauce made from Granny Smith apples and served warm. Love to make soups and casseroles, anything that allows me to be a little bit creative.

Extreme Chocolate Cake
This is probably the best chocolate cake recipe I have tried, however I feel compelled to mention that both the cake and frosting recipes are on the back of the Hershey's cocoa can.

Mama D's Italian Bread
Very good bread. I really appreciate FatMama's review that talked about Italian bread in general, add more flour, dough never should be sticky. I was ready to give up because it was still sticky, thinking I had done something wrong (got a KitchenAid mixer for Christmas and still learning), but then I went back and added about another 1/3 cup of flour after reading the review. I ended up adding about an extra one-third of the amount of flour called for but eventually it all came together beautifully. I too baked it only about 28 minutes (made 2/3 of the recipe, 2 loaves). Very tasty bread and crusty. We enjoyed it with homemade bean soup while watching the snow fall :)

Granny Kat's Pumpkin Roll
Help, any suggestions appreciated. I too had the problem of cake cracking. I followed the directions to the letter. (used parchment paper on the pan) It cracked as I was unrolling it, then after spreading the frosting and re-rolling it cracked/split completely right about in the center. I was still able to roll it up and cover in plastic wrap and slice it, taste was excellent, so I give it excellent rating. Tried a second one and this time I put a piece of waxed paper on the dampened towel, sprinkled the powdered sugar on that and let it cool about 5 minutes longer. Same thing. Will definitely make it again, but would lke to make it w/o the cracks/splits so I can give it to friends. TIA for any help.
