What an elegant combo of flavors, minus the "FAKE" crab. Sustitute the real stuff and my wife loves this stuff. Highly recommended!

Use the fresh "dungeness" crab if you can get it and/or blue if you can't. Turns this recipe of mediocrate into food fit for a California King!

Crab and Swiss Omelet

As a huge fan and very frequent recepient of loads of Dungeness crab. Fresh, i.e., swimming that morning and cooked the same evening. This omelete is probably the best one I have ever had!. I sometimes sustitute "Rumiono" brand sharp white cheese and/or an English Stilson. This is a local cheese manufacturer and willbe difficult, although not impossible for you Easterners" to obtain. Everyone knows that Northern California cheese is second to none and , hence, the difficulty to obtain. I worse comes to worse and you can not get it, emeil me and I will ask the owner to oblige you. Crab & Avocado Salad with Fruit Salsa

If it is not Dungeness crab from the great Northwest, it is NOT crab. I have eaten the blues and the kings, bt, the Dungeness is by far the sweetest and the most appropriate crab for this recipe.

Blue Cheese Beef Tenderloin

WE tried this about a week ago and used Oregon state blue cheese and a fine Oregon Sirah. Wonderful! We substituted Elk back strap, which is much better for you and can cut down the expense considerably. It will lower your cholesterol, specifiacally the "BAD" stuff(LDL). For those that don't hunt, this recipe is an arterial clogger. I am a physician and watch that at least 80% of the red meat we ingest is game.

Beef Tenderloin in Creamy Porcini Sauce

I substitued fresh chanterelle mushrooms and the flavor was incredible. Also, I used Elk tenderloin, which, in my opinion, is far superior to beef.
