Pasta and Salmon Salad

This recipe was everything I wanted it to be: quick, simple, healthy, delicious, and easily adaptable! I smoked the salmon myself and it still only took 30-40 minutes to put everything together. I used angel hair because it was what I had on hand. I used 1T of a combination of herbs instead of just tarragon. I used 2T of lemon juice in the dressing because we really like lemon. And I used broccoli instead of peas. The oil really emulsified as I beat the dressing and made a delicious and easy dish! We will definitely be having this again. One caution: the 2 of us needed all the dressing! I would double the dressing to make the stated 4 servings.

Potato Salmon Patties

So quick, easy and yummy! I confess I did not have instant potatoes so I substituted instant hummus. (I had some on hand from camping trips) For me this recipe yielded 8 large patties. I ate 3 of them with asparagus (steamed 5 minutes then sauteed 2 minutes in evoo, lemon juice and sesame seeds) A very quick and satisfying meal!

Tofu and Veggies in Peanut Sauce

I added carrots and ate this with buckwheat soba noodles and enjoyed it immensely. The only reason I gave four stars was that my dinner companion said that it was bland. Next time I will not share!

Mulligatawny Soup I

Yum-O! We just finished licking our bowls clean. The soup was fantastic. I used more potatoes and less rice. I used a whole (large) Fuji apple and pureed more than half of the soup, leaving about 1/3 of it chunky. We ate this as a main dish with buttered toasty homemade bread. Will make again for sure!

Warm Artichoke Dip

I just made this and immediately ate half of it with Triscuits. I don't care for mayonnaise, so I substituted 1/2 tub (4 oz.) of cream cheese spread. The only thing that kept it from getting a perfect score was that it was a little salty, but that could be blamed on the Triscuits. Great recipe!
